Eggplant-Ziti Parmesan

This was a very good alternative to a more traditional eggplant parmesan. My husband and I would have liked a little more sauce so keep some extra on hand if you enjoy lots of sauce too. Also, I did not salt the eggplant for a full hour (or overnight) but more like 20 minutes and it still turned out fine. We had this with a big salad and there were plenty of leftovers for lunches.

Thai Chicken Balls

I really liked these meatballs and so did my husband. I expected my daughter (3) to enjoy but she did not, I think it was the cilantro. I plan to make these again and make her a few without the cilantro. Was great paired with peanut butter noodles as suggested by another reviewer.

Dark Chocolate Cake II

SUPER moist cake. I let it sit overnight before frosting or I think it would have ripped. But so delicious and EASY, it was worth it. Made it with two round cake pans and cooked for 25 min. Yum!

Catherine's Spicy Chicken Soup

I have made this recipe twice now and it just gets better! My husband loves it! The first time I made it I used chicken as called for, but the second time I used left over Turducken from New Year's. Both were delicious. I am sure any left over poultry would work fine... or shred a rotisserie chicken if you don't have time to prepare the recipe as written. Also, I have not added the canned whole tomatoes and have not missed them. I felt there was enough tomato without that addition. I think the only other thing I add to this recipe is crushed tortilla chips to the top along with a bit of sour cream - yum!

Slow Cooker Beef Stroganoff I

Have made this a few times now and have been pleased each time. Very nice recipe for making changes per taste preferences. We definitely like it over noodles and adding fresh (sauteed) noodles just before serving.

Biscotti Toscani

I have only made biscotti twice and this recipe was fantastic! I personally enjoy the almond and citrus flavors together - I didn't have time to put the chocolate on but they were still delicious. Also, I forgot to put the almonds in which would have been tasty, but again it is a solid recipe alone even if one forgets certain items (as I tend to do). I gave these as Christmas gifts this year which worked nicely because they are not as heavy as the more traditional christmas cookies but still feel like a treat when you are eating them.

Alyson's Broccoli Salad

Excellent salad! I love that you can change the ingredients to your liking. I used slightly less dressing, sunflower seeds and have used both yellow raisins and dried cranberries depending on what was on hand and my mood. Delish.

Fra Diavolo Sauce With Pasta

Very good, quick and easy, and healthy! We did use canned tomatoes as the fresh tomatoes aren't quite ripe in our stores but thought it tasted great anyhow. I can see that fresh tomatoes would be even better. Even so, definitely loved this recipe. Paired well with green salad and a glass of red wine.

Portobello Mushroom Burgers

Excellent! I used fresh rosemary and oregano because that is what I had around, but followed the recipe from there. It was delicious. My husband was not so excited about this recipe (he told me later) but ended up really liking it. I think this is something we will make again for a quick and healthy week night dinner.

Kickin' Collard Greens

These greens were awesome! Like most people, I did alter the recipe a bit but not much! I think it is safe to say I used more bacon then was called for - probably more like 6 slices of bacon. I was a little stumped with how many greens to use. Our store sold them in huge bunches which ended up being more like 3 pounds vs the 1 pound called for. Also, I know that you can buy greens pre-washed and pre-chopped which would be a huge time saver, but I couldn't find those in our store and it worked fine. Leave yourself some extra prep time if you have to clean and chop your greens. I don't recall using more chicken broth but probably had extra on hand and might have added a little more then the recipe called for. Basically followed the recipe from that point on and the greens turned out excellent. We served around 8-10 people and there was only a few greens left! I highly recommend this recipe for anyone wanting to taste some great greens.

Eggplant Parmesan II

Oh how my husnand loves this meal!! He would eat it every night if he could. I usually salt the eggplant for about 20 minutes before breading and baking. It will sweat out some moisture so just brush off the salt and collected fluid before proceeding. Also, I have used the italian breadcrumbs and am wondering if panko might be better. We tend to keep the jars of tomato sauce around and I prefer to eat this dish with the more basic marinara sauces vs the more flavored ones (mushrooms, spicy, cheesy, etc) - I think it takes away from the good eggplant flavor. Pair it with a salad and you have a great meal.

Grandma Ople's Apple Pie

I have only made apple pie one other time and it was a disaster! This pie was absolutely wonderful, I received so many compliments (and who doesn't love that!?) I also added the apples directly to the sauce as well as cinnamon, nutmeg and vanilla. A frozen pie crust was used for the top and bottom crust and it still looked beautiful! Thanks for a great recipe.

Broiled Tilapia Parmesan

This recipe was great! I made it last night for my husband and it was so quick and easy. We paired it with some couscous and steamed vegetables (and of course a glass of white wine!) - from start to finish it took no more then 20 minutes for the whole meal. I am sure you could make adjustments to the herbs and it would still taste wonderful. Thanks!
