Jamie's Minestrone

Reviewed: Jan. 27, 2011
Delicious recipe! Made a few minor changes - chicken broth instead of water, omitted wine and used dried oregano & basil, Also added diced tomatoes. Very satisfied, thanks for sharing!

No-Mayonnaise Ranch Dressing

Reviewed: May 25, 2011
Great tasting ranch dressing! So easy to make! Only tweaks made was adding extra of the seasonings, to suit our personal preference. I always feel better about serving homemade dressings rather than store bought varieties that contain HFC, preservatives, artificial color & flavors, and ingredients I can't pronounce. We have used this on salad, as a dip and along side wings. Thank you for posting a great recipe!

Aunt Mary's Eggplant Balls

Reviewed: Jun. 28, 2011
I LOVE eggplant....but I hate to say this recipe didn't do much for me, and my pet peeve is bland food. Totally lacking in flavor, needs more garlic & much more seasoning. The final product tasted to much like egg for me and had too much breadcrumb which created a mushy consistency. I had high hopes for this recipe... I may consider trying again because I'm always looking for creative eggplant recipes, but will make sure to make many changes to suit our tastes.

Cream Corn Like No Other

Reviewed: Jul. 9, 2011
So yummy! I made this the first time as stated on the recipe with the exception of the parmesan cheese because I didn't have any on hand. Turned out excellent! My second attempt at making this I used all milk because I didn't have heavy cream on hand and added a tablespoon or so of cream cheese, also reduced the sugar to 1 tablespoon since NJ corn is super sweet. With added changes still turned out wonderful! Very easy and forgiving recipe! With a recipe as wonderful and simple as this, I don't know how anyone can eat canned cream corn. Thanks for sharing!

Green Beans with Cherry Tomatoes

Reviewed: Sep. 13, 2011
When I first read this recipe, I was hesitant to give it a try. At first it seemed strange to me for some reason, but I am so glad I made it! This dish is delicious!! Simple changes were adding some garlic & onion that I had already cooked, thinking I was going to make another green bean dish. Also cut down on the butter and sugar to make it a bit healthier. Used fresh chopped tomatoes, as I did not have cherry tomatoes on hand. I also made the sauce and then tossed the cooked beans in at the end to warm everything. Great dish, awesome flavor, and very easy to make! Thanks for sharing :)

Angel Chicken Pasta

Reviewed: Oct. 14, 2011
I hate to have to write this, especially since this recipe has such a great rating, but I did not care for this recipe. I was hesitant to make this given the ingredients, and I'm sorry I didn't go with my gut feeling. The flavor was not good at all, and the texture of the sauce was terrible. It was so thick that it just made a clumpy mess of the spaghetti. The flavor was artificial, like a processed meal from a box, the only thing you can taste is condensed soup. If you are used to eating from scratch, homemade meals you probably want to avoid this recipe. This was a total miss for us.

DELICIOUS!!! Very simple and taste is perfect....reminds me of a cookie my Grandmother used to make. Only change I made was to toss in sugar while still warm. The recipe is a hit, thanks for sharing!

Absolutely Best Brownies

Reviewed: Jul. 5, 2012
Excellent recipe!! I was in a pinch and needed to make a last minute dessert to take along to a July 4th party. I had all ingredients on-hand so I decided to give this recipe a try.....I'm so glad I did! Brownies had a rich chocolate flavor, and a true 'brownie' texture, not cake like at all. The brownies were the hit of the party and were the first thing to go. Had 3 people ask me to go home and bake a second batch! I used regular flour instead of self-rising, only because it's what I had in the house, and omitted the nuts. Added a layer of homemade cream cheese icing & decorated to look like the American Flag. This will be my go to brownie recipe from now on. Thanks for sharing!
