Spiced Butternut Squash Muffins

DELICIOUS. 1 cup=1/2 pound butternut squash. Used 3/4 cup whole wheat flour, 3/4 all-purpose flour (instead of 1 1/2 cups all-purpose per recipe) and used 1/4 cup applesauce in place of butter. DELICIOUS. Will be making more later in the week. Husband loved them, too!

Almond Chicken Stir-Fry

EASY and delicious. Perfect for making on a work/school night. I used "fake" chicken (veggie/soy chik'n strips), which I will NOT use again- they are already high salt which made the dish too salty. Will use real chicken next time, as I will definitely be making again.

Black-eyed Peas and Ham Hocks

Absolutely delicious and EASY. Used fresh pink eyed peas instead of dried black eyed and placed in crockpot on low over 8 hours along with 1/4 onion, chopped. Came home from work and hubby and I gobbled it up!
