Cranberry Oat Yummies

Zucchini Patties

These were good! A different way to eat up the zucchini. We ate them with chunky marinara sauce. I used 1/2 bread crumbs, 1/2 flour and fried them in olive oil.

Erin's Indonesian Chicken

I loved this recipe!! I got some fresh green beans through my CSA, and wasn't sure what to do with them, since I have disliked green beans all my life. I found this recipe and figured with the sauce and the chicken, they would be tolerable....Well, I ended up having seconds!! It was delicious. After simmering the sauce, I added it to the skillet with the chicken and beans...then I sliced the green onion and stirred it in. Served over brown rice. AWESOME!!

Taco Pizza

This pizza was great! Used my own pizza crust recipe, substituted taco sauce for the tomato paste and water, used green onion instead of regular onion, added shredded lettuce, chopped tomato, and sour cream to the top! Will make again for sure!

Pralines, Coffee and Cream Cake

Oh my! This was one of the best cakes I have ever had! I used a cup of strong instant coffee instead of the liquer and used about 1/3 the amount of pecans (just because they are expensive) and an 8 oz container of cool whip instead of 12. It turned out perfect!! Definitely recommend this to anyone looking to indulge!

Unbelievable Chicken

Chicken Stuffed with Spinach and Sweet Peppers

This was delicious.....I scaled it back to just use 2 chicken breasts for my husband and I- Instead of cutting a pocket for the filling, I pounded them thin and rolled the filling up and wrapped in foil. Also, Instead of marinating the chicken ahead of time ( I forgot) I just dredged the chicken in the marinade before rolling and wrapping in foil. I baked in the oven at 400 deg. for about 40 min or so. Delicious!

Roasted Chickpeas

I would suggest using less oil, and I seasoned mine with Cajun seasoning- they were delicious...I started watching them a few min before the suggested time, but still had a few burnt ones...just keep an eye on them and stir them once or twice.

These were awesome!! We are always looking for ways to add protein to our diet without eating meat, and we love chickpeas....these were crispy, flavorful, and the cucumber sauce was creamy and fit perfectly with the other flavors! A+++

Cajun Chicken Pasta

I made this for dinner with friends....everyone loved it! Definitely not healthy, but delicious! I doubled the recipe, used 2 cups heavy cream and 1 cup half-n-half. I had to add quite a bit of cornstarch and water to thicken the sauce. It was a hit!

Homemade Cereal

This was a good base recipe for granola- I substituted unsweetened applesauce for the oil, unsweetened apple juice for the water, omitted the dates and coconut, added pine nuts, slivered almonds, raisins, dried cranberries, sunflower seeds and dried apricots. I also used all wheat bran instead of the mix of wheat germ and bran and it turned out fine! Very good hot like oatmeal, cold with milk, or mixed with applesauce.
