Morning Glory Muffins I

Have made this several times and I love it. I will freeze the muffins once cooled and take them out for breakfast as needed.

Cornbread Muffins I

I cut the amount of sugar to 1/3 cup, used fresh corn that I removed from the cob, and made into mini muffins to serve with a salad (Blueberry walnut salad)for a tea. Everyone enjoyed them. I cooked the mini muffins for 15 minutes - it made 3 dozen. The leftover are yummy too.

Fresh Apricot-Honey Sponge Cake (Russian Style)

I made this using the changes the second reviewer suggested. Everything was GREAT until I tried to remove it from the pan. With some after the fact research next time I would make it in a springform cake pan. After baking let the cake cool in the pan (like an angel food cake). So I am using my cake pieces with blueberries and whipped cream like a trifle. It may look terrible but it tastes awesome.

Herb Roasted Pork Loin and Potatoes

This was great. I marinaded the roast for about 3 hours in 2 c cider, 2 T. Balsmic Vinegar Dressing, 2 T. salt. I did with poatoes and carrots. I basted the potatoes, carrots and pork approx every 10 min. When I took the roast out to rest I turned the broiler on to crisp the potatoes. Everything was yummy. Plan on using the leftover pork for BBQ pork sandwiches and chili later in the week.
