Ham and Swiss Casserole

A versatile dish, you could serve this for dinner or brunch if you wanted to. We quite enjoyed this though, even if the noodles near the top were a bit crunchy and dry in some parts - be sure not to overcook/undercook anything! It might ruin the whole recipe in itself, however this is really good with loads of salt and black pepper.

Edamame Dumplings

I love edamame, but the combination of spices and sauces in these dumplings was way too salty for me. These are good if you like very salty things, if not try and avoid.

Best Beet Salad

Mayo and beets make a terrible combination. And eggs, with beets? Terrible. We didn't care for this at all, and I will not be making it again.

You could even use canned black olives for this, but fresh is preferred. Followed this recipe to a T, and served it with pita triangles and tortilla chips. It is a little oily, but there was nothing left in the bowl afterwards. Thanks for sharing.

Chicken Rotini Soup

This was good, just with the exception that the pasta goes soggy if you boil it twice -once by itself, once with veggies. We just set the pre-boiled pasta aside and when it came time to serve, put the pasta in the bowl and dumped the rest of the soup over top. However, it was ok otherwise.

California Style Israeli Salad

Omitted the tomatoes for fear of it getting soggy, but this is a really yummy summer dish! Very crunchy and refreshing - this can easily be doubled to serve a crowd,and I find it maintained well the next day. This stuff is also good served in pitas, or on its own with a some grilled chicken mixed in.

Cold Szechuan Noodles and Shredded Vegetables

The soba noodles definitely make the recipe. I followed the recipe almost exactly, with a few tweakings of my own. Omitted the tamari, added in a couple tablespoons of Vietnamese fish sauce and a bag of frozen Asian vegetables -subbed for the red pepper- with some chunks of chicken - it was delicious! Will definitely be making this again.

Corn Chowder II

Very delicious, not to mention easy to make. This stuff can serve a crowd, and freezes well for leftovers. Only change I made was omitting the red peppers as personal preference, otherwise I wouldn't change a thing!

Black Bean Cigars

Even the non-vegetarians in my family enjoyed this! I didn't change a thing, other than substituting the frozen potato rounds for canned due to what we had on hand, and they turned out great. Will definitely be making this again.

Tartar Sauce I

This did require another scoopful of pickle relish, but otherwise it was really good! Just like the tartar sauce they serve in the authentic fish and chips shop. I served it with fried shrimp, and there was none to put back in the fridge for leftovers. Thanks for sharing!

Baked Salmon with Coconut Crust

This one certainly was...different, and I have my reasons in regards to the coconut 'crust' for giving this three stars. Most of the coconut didn't stick to the fish, so in the end I was left with breadcrumb-coated salmon, and the coconut ended up being too sweet anyways.

Papaya Bruschetta

Definitely a different take on one of my favourites, bruschetta, but I found it to be a little too sweet. I love papayas, but the dressing ruined it for me. The sauce went all runny, and by the time it was served, I had soggy bread. Don't think I'll be making this one again.

Fried Plantains

Substituted the oil for butter as per other reviews so the plaintains wouldn't come out oily-tasting, and the end result was quite delicious! Just what I was looking for. They are good with many toppings, but I enjoy them best by themselves.

Lemon Orzo Primavera

This meal makes a wonderful light lunch or side dish! We were really impressed. To accompany the lemon zest I added two tablespoons of juice from the same lemon, and the flavours blended really well. Slightly tangy, but delicious. Next time I will increase the amount of carrot and zucchini, and possibly make the additions of eggplant and onion to make it even better.

Baked Sweet Potato Sticks

Cutting the sticks thinner definitely helps. These were delicious! We dipped them in ranch dressing when served, and kept whatever was leftover...they're even better cold the next day! Thanks for submitting.

The Best Thai Peanut Sauce

Delicious and flavourful! The mixture may sound a little odd (fish sauce, coconut milk, peanut butter) and I was a little hesitant to try this, but I am glad that I did! Using smooth peanut butter makes all the difference - I also made the addition of extra cilantro and some lemongrass. Served with chicken satay. My end verdict? A huge hit!!

Crackers a la Yvette

An interesting way to spice up plain saltine crackers - the seasoning gives them bite! I think I put in too many chili flakes because mine were a little spicy, but otherwise these were good for a snack, just on their own.

Gorgonzola Cheese Sauce

Filipino Lumpia

We really enjoyed these!! For variation, I added some diced shrimp and glass noodles...made it into more of a spring roll, I guess. Brought it to a family gathering and there was none left on the tray. Great recipe LatinaCook, thanks for sharing.

This is sort of like a tuna casserole in potato form. Was a big hit with kids, they didn't even notice there was fish. However, it didn't go over well with me. The texture was a little funny.
