And now for something different, these things were pretty good! We used homemade dough from my breadmaker for these, and they turned out quite well. I was a little apprehensive at first upon using lamb and almost opted for ground beef...I'm glad I didn't! They ended up a little bit burnt, but that was my own fault. Tasty nonetheless.

Lime Chicken Soft Tacos

SO good. Love the tanginess. I added a bit more red wine vinegar than the recipe called for, and matched with the lime juice -yes, I like sour things-. Served them with some shredded fried tortilla pieces, and got star reviews all around! This is a great summer recipe, and will definitely have a place on our table at our family's annual pool party. Creamy Chicken Lasagna

This is just like how my grandmother used to make her chicken lasagna, minus any vegetables in the sauce, and even that was homemade. As a student who is always on the roll, I was looking for something just as easy yet close to duplicating, and I've found the one. It fed me for about a week in leftovers, and was still good the next day. Serve with some garlic bread and you're good to go.

Beef Tamales

So yummy! The masa harina took me a while to find, but I think it completes the dish, and am glad I was able to get my hands on some. These are quite a bit of work, but plenty well worth it in the end. Will definitely be making these again. :)

Mexican Corn

Was a little bit too spicy for me, but luckily my boyfriend likes it hot! He ended up eating the entire pot of the stuff, so you can thank him for the four star review (personally I'd give it a 2).

Carmel's Crunchy Pea Salad

Very crunchy, wow. Traded the sour cream for mayo since we didn't have any on hand, and I am also not a big fan of the cashews, so we left those out too...still very good though. Try adding a bit of garlic.

Absolutely amazing Colleen, thanks for sharing! Had to leave out the onion as we didn't have any on hand, but it was a huge hit. Quick and easy, and it makes a lot. We still have some in our freezer...mm...good for quick dinner.

Rice & Beans (Haitian Style)

Beats Jamaican style red beans and rice anyday, I must say. Very good! Smelled really yummy when I was making it, and tasted even better. Passed the test among even the pickiest of critics, even though I had to leave out the adobo powder since I couldn't find any.

This is another one of my basic staples, I'm a poor pasta addict, and prefer eating it cold to hot anyday. Very easy to make, and I don't mind touches of blandness, so it's really not that bad!

Cowboy Macaroni

We're not big fans of canned corn so it was left out when we made this, but overall it wasn't too bad. Definitely an interesting way to make macaroni, and my picky boyfriend ate two helpings. Sort of convincing when I really got into it and started cooking in a cowboy hat and my old leather riding chaps xD. It was yummy.

I love clams, but I found these guys to be a little chewy, and the recipe could've done without the crackers. Not sure I will make these again, or else use a different recipe.

Crab Cakes II

So the crab cakes didn't hold together very well when we were making them, but they sure were tasty! I used canned crab since fresh is hard to come by here and requires a lot of work, and achieved similar results. Don't use a lot of oil, they'll only fall apart easier, and that aspect of this recipe really wasn't necessary. Just a bit of butter/margarine in the bottom of the pan is good.

Restaurant-Style Coleslaw I

I've been looking very long for a good coleslaw recipe, and I do believe my search is over! Made this for my family, served five of us very generously; no leftovers since we polished off the whole bowl in one go! We forgot to add the extra milk, just had the buttermilk and followed the recipe as is...so yummy. Thanks for sharing Marsha, we'll definitely be making this one again.

Spinach Dip with Water Chestnuts

This recipe is very similar to one in my cookbooks, and I bring it to every one of our big family gatherings. Usually we substitute green onions for shallots and serve in a hollowed out pumpernickel loaf. Makes a lot, and is SO good. Try grating some fresh parmesan over the top.

Manhattan Clam Chowder II

I really liked it, very similar to my nana Brenda's old recipe. Added some bacon to it as well because that's what she used to do, and I am a carnivore extraordinaire, and it turned out well, despite the fact I have simmered it for too long. A bay leaf is really good in there too; you only need one.

Albino Pasta

I too am a teenager, with a rather imbalanced budget. This has become the ultimate staple for me, even sometimes when I don't have any cheese, i load it up with spices instead! Not crazy bout a lot of flavour, I like it plain and simple...and that is what this dish is. #1 comfort food.

Pesto Tuna Salad with Sun-Dried Tomatoes

Delicious! I ended up turning this into a pasta salad (adding in whole wheat rotini) when some guests came over, and there was nothing left in the bowl afterwards! Thank you for sharing such a great recipe.

Sweet Potato Potato Salad

Simply delicious, really simple, yet effective. Served this at a barbeque and it went FAST! I added some radishes in there as well, and a little extra mayonaise, and served it in a hollowed out cabbage. Very good.

Tuna Noodle Casserole IV

Was not fond of this recipe. It was bit bland, and the croutons on top ended up going soggy on me. Made this for the family, they didn't really like it either. I was the one who ended up having to eat the leftovers!! Thanks for the recipe Richard, but I will not be making this again.
