Wheat Germ Whole-Wheat Buttermilk Pancakes

I made the following changes: used baking powder for baking soda, added blueberries. My baby rejected the pancakes and pulled out all the blueberries to eat. The pancakes had an overpowering whole wheat flavor. If I make it again, I would replace some of the whole wheat flour with all purpose.

Health Nut Blueberry Muffins

The muffins were horrible! I substituted skim milk for the buttermilk, wheat bran for the oat bran, and applesauce for the oil. The muffins came out dry and bland tasting. I don't know if any of the substitutions made a difference, but I will not make these again.

Gobble Up Granola Snacks

This was so easy to make and I didn't have to turn on the oven. I added crush Fiber One flakes and grounded flax seed to make the granola more healthy and filling. I had to play around with how much of the Fiber One flakes to add since too much made the granola too packy. This is a keeper!

Egg Salad Sandwiches

I used onion powder, a dash of salt, and bottled mustard. I didn't have dill weed so we made it without. My husband loved the it and have asked me to make it again.

Crustless Spinach Quiche

Great, easy recipe. I used 8 eggs and half a bag of fresh spinach. I only had sliced Muenster cheese so I tore the slices into small pieces and mixed it in with the egg mixture and placed 4 slices on top of the quiche. I ended up using an 8oz bag of cheese and that was plenty for me. I also added Italian seasoning and cooked green lentils for extra flavor. I would reduce the sodium or omit it all together since the quiche was a bit too salty for me.
