Chicken Cordon Bleu II

Reviewed: Jan. 4, 2008
Absolutely wonderful! I doubled the corn starch and cream since my family loves sauce. Thank for the recipe!

This was okay. I added some vanilla syrup to make it a bit sweeter.

Spanish-Style Chicken Stew

Reviewed: Jan. 2, 2008
This was pretty good stew. I used 1.5 onions instead of 3. I only had ground chorizo, so I cooked it first and added with the chicken. I used boneless, skinless chicken thighs which seemed to get lost. Notes for next time - double the chorizo and chicken and more carrots. Serve with crusty bread to absorb the juice. Yummy!

California Chicken Spaghetti

Reviewed: Jan. 2, 2008
This is a nice dish. Using another reviewer's suggestion, I used 2 cans of Italian diced tomatoes instead of fresh for more juice. I only had a little over a tablespoon of Cajun seasoning left, so that is all I used - and it was nicely flavored. I think that next time, I might cut back a bit on the basil and/or add fresh basil. Then end product was riddled with basil flecks - not terribly pretty. However, I will be careful, because the taste was quite good. I did add artichoke hearts and olives. Thanks for the recipe!

Italian Sausage Soup with Tortellini

Reviewed: Jan. 2, 2008
I served this on New Years Eve and everyone raved over it! I used canned diced tomatoes instead of fresh tomatoes as another reviewer suggested. This soup is wonderful!! One suggestion - for storing left overs, pull the tortellini out of the soup and store in a separate container so that it will not absorb all of the liquid. Then reheat with soup - worked great!!! Thanks for the recipe. I'll make it again and again.

Super Sausage Gravy

Reviewed: Dec. 28, 2007
Nice flavor, but hubby (sausage gravy fan) thought this was too much sausage. Next time, I'll double (at least) the milk and flour.

Anne's Homemade Chorizo

Reviewed: Nov. 12, 2007
I am delighted with this recipe which calls for normal ground meats. Ever look at the label when you buy chorizo from the store? Pork hearts and salivary glands - yuck! I have a few wonderful recipes that call for chorizo. I will use this every time. Thanks!

Adobo Sirloin

Reviewed: Nov. 12, 2007
Just okay. I marinated mine over night. The lime and cumin seemed to overpower the chipotle.

Danish Peppernut Christmas Cookies (Pebernodder)

Reviewed: Oct. 21, 2007
These were pretty good. I used a little less flour and made the cookies a little bit bigger than indicated in the recipe. So, the result was not a hard cookie (when I read the first review I was worried - I didn't want to eat gravel!) This is a nice small spice cookie which is not too sweet.

Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Oct. 21, 2007
This is a tasty new way to serve pasta. I found it a tad too hot though. Next time, I'll use 1/2 t. cayenne instead of the 3/4 t. Also, I'll definitely try adding grilled chicken. But, there definitely will be a next time. Thanks for the recipe.

Boyfriend Bait Beef Stroganoff

Reviewed: Oct. 17, 2007
This recipe was great. I disagree with other reviewers with respect to cooking time. When using tenderloin/filet you do NOT want to over cook the meat. One inch cubes will brown quickly over medium high heat. If you over cook the meat it will loose tenderness. The flavor was wonderful! My husband loved it too. Thanks for the recipe - I'll make it again and again!

I made this recipe and crab cakes for the same meal. We enjoyed the white sauce on the crab cakes too. This is a nice beer batter recipe - stays crispy.

Pickled Pepper and Onion Relish

Reviewed: Oct. 17, 2007
This is a nice recipe. I followed it to pickle my end-of-season peppers from my garden. I used mostly cherry peppers, Anaheim and jalapeño peppers, mixed in with some red bell pepper, finger carrots and lots of onions. Thanks for the recipe!

Pumpkin Roll II

Reviewed: Oct. 8, 2007
This turned out very pretty. I added 1/2 teaspoon nutmeg. I was very concerned that the recipe directions indicate that salt should be added, but the amount is not specified. I guessed conservatively at 1/4 teaspoon. I think that 1/2 teaspoon may have been better. Mine did not crack and was very easy to unroll and roll back together. I baked for about 13 minutes though - to make sure that it was just done and not dried out. This was good, but not spectacular.
