Kim's Lasagna
This tastes so good! Maybe it was the brand of crushed tomatoes I used, but I had to add about 1.5 cups water to make the sauce loose enough to simmer. I also had a lot of sauce left over - I don't use a deep-dish pan. The sauce tastes great though and I'll be saving the rest for another meal. I really liked the tip about soaking the noodles rather than boiling them - worked great! Highly recommend!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo
This recipe is fantastic! Oh man. I used frozen tortilla crusted tilapia instead of frying it myself. The chipotle mayo is finger-lickin good. It is spicy but the sweetness from the honey lime sauce really cuts through that and balances it out wonderfully. If you want it less spicy just cut the chipotle peppers down to one or remove the seeds. I can't wait to make these again!

Fiery Fish Tacos with Crunchy Corn Salsa
I followed the recipe using half the cayenne and half the salt and it was still a bit too spicy and way too salty! The salsa was all right but still pretty bland... it's missing something. Sadly, my favorite part of the dinner was the taco shells!
