Easy Key Lime Pie I

This recipe was so easy to make. Perfect for cooking with kids. As other have suggested, I doubled the lime juice and the condensed milk which gave me a full-to-the-rim pie (Great!) but the consistency was not firm enough with just 4 eggs (another reader suggestion). The flavor is awesome but I'll probably use 5 egg yolks next time, just like the recipe says.

Downeast Maine Pumpkin Bread

Incredible! So easy to make and so tastes soooo good. One of my favorite recipes. I usually add chopped dates and candied ginger (instead of ground ginger) to it. And a tbs of sourcream b/c everything is better w/sourcream, right?

Key Lime Pie - Low Carb Version

Crust: I made it with 2 cups of ground up almonds instead of pecans. I skipped the coconut extract (just not my thing) and substituted Fresca soda for the cold water for some more citrus flavor. Also added some lime juice. The consistency was great, and everyone loved it.

Cornbread Muffins I

OMG! Love this recipe! Like many others before me, I reduced the sugar to 1/2 cup and used about 2 TBS of honey. I also used canned corn instead of frozen. I have never made cornbread before but this recipe was amazing. Definite keeper.

Linguine with Clam Sauce

Easy, fast and fantastic. I did use olive oil instead of vegetable oil and a lot more garlic (I think 8 cloves) plus a lot of parmegian (sp?). Loved it!

Pineapple Bread

I thought this recipe was kind of mediocre. The texture was also very crumbly and not moist enough. Not bad but nothing special.
