Kohlrabi Slaw
My family and I loved this, and I don't usually like coleslaw. The first time I made it, I used kholrabi, cabbage, and carrots. I subbed agave for the sugar, and didn't add celery seed because I didn't have any on hand. It turned out great! The quick version: buy a bag of pre-chopped "coleslaw" (cabbage and carrots) and add your ingredients from there. This recipe is delicious and definitely a keeper for us!

Delicious Gluten-Free Pancakes
These are great for gluten-free, but the consistency is not at all similar to regular wheat pancakes as described. The TASTE is great though! I made a few modifications to fit in w/ our diet: ground flax seed for eggs, 1 tbsp agave for sweetener, and almond milk instead of water. (I added about 1.5 cups.) My experience w/ xanthan gum is that there is a kind of "gummy" texture to anything I bake w/ it. I may need to explore other binding alternatives. All in all though, this is a great recipe and a keeper. My kids love them!!

Chicken Pot Pie IX
This is a keeper. I made a few modifications: I doubled the sauce, and used 1/2 heavy cream, 1/2 milk. I omitted celery seed b/c I didn't have it, and instead added a dash of celery salt. (I thought it needed a bit more flavor.) Then I added the vegetables (which I boiled for 15 minutes as instructed, but also added potatoes) and let that all simmer together for a few minutes while I whipped up some homemade buttermilk biscuits. After checking to see that the vegetables were cooked thoroughly I buttered a 9x13 baking dish and added the sauce. Then I placed the cut out biscuits on top of that and baked at 450 for 12 minutes. Everybody loved it! Making the biscuits saved time for me... I can make those a little faster than I do pie crusts! This is a GREAT recipe that I will use as a staple from now on. The perfect comfort food!
