Cranberry Pork Roast

Slow Cooker Mashed Potatoes

These worked out very well. 3 hours proved just perfect. Medium sized crockpot full made leftovers but Dale and family weren't here. Should be just about right for the whole crew

Vini's Pork Roast

This was an excellent reipe for pork loin. I took the recommendations of the other reviews and cut the salt to 1/2 tsp. It was just right. I roasted it on a rack for the recommended time, but at 350F. We loved it. The slight crust that formed was very tasty and the meat was moist and tender.

Chocolate Martini III

This is a yummy drink, but for me the chocolate syrup makes it a little too sweet. I often omit it. The addition of a chocolate kiss in the bottom of the glass adds the touch and also works as a garnish

Can't Leave Alone Bars

I followed the recipe exactly as I usually do the first time I try a new recipe. I was vwey pleased with the result. It is a very sweet cookie bar, but then that's the idea, isn't it. The grandchildren certainly gave it 5 stars. Sometime I may try some of the variations suggested but for now I am content with the recipe as written

Campbell's® Cheesy Chicken and Rice Casserole

This was a tasty casserole for a weeknight supper when there isn't a lot of time for fussy cooking.I browned the chicken breasts slightly before adding to the casserole and spiced them with roasted red pepper and garlic. I also added seasoned salt, a little garlic powder and some tarragon to the soup mixture. I used fresh broccoli florets for the vegetable. My 4 year old grandson is VERY difficult to feed and he ate it, so that is good for a star or two.

Marinated Baked Pork Chops

Quite good. If you follow the recipe and do not cover the pork chops the marinade does stick to the chops. Draining them half way through is a good idea, though.I let the chops sit in the marinade for 4 hours before baking.

Caramel Snack Mix

I had good success with this recipe. I did boil the caramel mixture for 2 min. on the stove rather than using the microwave, then followed the recipe directions. Clean up need not be difficult.Just put some hot water in your roast pan and boil it on the stove for a couple of minutes, scraping the bottom with a wooden spoon. The pan comes clean easily. Any caramel coated treat will take on moisture if left in an open dish too long(even commercial ones).Thhis treat should be stored in a covered , airtight container.

Brown Sugar Baked Beans

This was my first attempt at using pinto beans. I soaked them overnight first, then followed the directions in the recipe.I did add a little of the liquid the beans were boiled in to the casserole, then I baked it about an hour, taking the lid off for the last 30 minutes to thicken it up a little. It was pretty good. Pinto beans are a little different in texture to the white beans we are accustomed to using.

Parmesan Catfish

This recipe just didn't work out for me. I used northern pike as catfish is not easily available here, so perhaps that was the problem. The fish came out way too dry and the coating still wasn't crunchy.Ate the leftovers as a cold snack and it was much better that way.
