Aunt Hazel's Apple Oatmeal Cookies

These were heavenly. I followed other cooks' ideas -- added nutmeg and cloves, and just chopped the apple with the peel left on. I used about a 3-1 ratio of butter and applesauce to lighten it up, and they turned out great. Mine needed to be baked a lot longer because I forgot to flatten them out ahead of time -- you really need to do that. Thanks for sharing a great, quick recipe!

Pumpkin Cheesecake II

This was AMAZING! I took it to Christmas dinner and it was a huge success, even with the people who said they weren't crazy about pumpkin. Just perfect in both texture and flavor. Thanks so much!

Grandma's Corn Pudding

I absolutely loved this! I took it to Christmas dinner and it was a huge hit. I did what one reviewer suggested and put it in two pie tins and it came out perfectly. Thanks for the great, easy recipe!

Easy Vegetarian Stroganoff

Yum -- I thought this was great!! Fast, super easy, and tasted close to the beef stroganoff I used to make in my pre-vegetarian days. True, it's not the most beautiful thing laid out on a plate, but it's quite tasty. Even my grumbling teenager, who was determined to think it was gross, ate a big bowl. Thanks!

Pesto, Goat Cheese, and Sun-dried Tomatoes Quiche

Super easy and quick to make, and soooo delicious. Didn't know where to get oil-packed sundried tomatoes in the grocery store -- finally found them with the specialty olives, capers, artichoke hearts, etc. This is an expensive dish to make, and certainly isn't low fat, but what a treat! I'm wondering if people have ideas about how to prevent the crust from absorbing so much of the pesto... didn't interfere at all with the yummy taste, but the slices could have looked better on a plate. Anyway, thanks for a great recipe!

Spaghetti Squash with Pine Nuts, Sage, and Romano

Egg-Free Low-Fat Oatmeal Cookies

Ugh. No question that you're eating something low fat. If you're desperate for something sweet, it'll do in a pinch, but they're so rubbery you can almost fold them. Sorry.... maybe I did something wrong.

Lemon Scones

So good -- very, very easy to make and you don't need eggs. I wanted a strong lemon taste so I added lemon juice and extract, and they came out just perfect. Thanks!

Sugar Cookies IX

This is as quick and easy as it gets, and the cookies are delicious without changing a thing. Just make sure you don't do what I did -- make them too big and put them too close to each other on the cookie sheet -- mine flattened out and sorta morphed into one big slab. (Still tasted yummy though!)Thanks for a great and EASY recipe, using just a few ingredients you almost always have in the house.

Canadian Molasses Cookies

I'm not sure what I did wrong, but my cookies turned out pretty much the opposite of "too sweet," as other reviewers said they were. These had a VERY strong molasses taste -- definitely needed to be buried under some vanilla ice cream or something (too bad I don't have any!).

Pesto Polenta Lasagna
