Quinoa and Black Beans

Reviewed: Mar. 1, 2014
Absolutely delicious! As recommended in reviews, I used one can of black bean (it's plenty) and topped it off with sour cream, chopped tomatoes, and avocado. Then I squeezed some lime juice on it. Heaven!!

As a vegetarian who loves all these ingredients I was really hopeful, but it is VERY bland as written.

Vegan Lasagna I

Reviewed: Feb. 18, 2011
I didn't actually eat any of this, but my vegan daughter really enjoyed it. I used rice noodles that I didn't have to boil ahead of time. Two packages of spinach were enough. I sauteed the onion with some red bell pepper and mushrooms, which gave it more flavor, I think.

Vegan Black Bean Soup

Reviewed: Jan. 22, 2011
Really liked this! Super easy -- I threw everything in the crock pot. It was the perfect dinner to come home to on a cold night. My vegan daughter sprinkled corn chips on hers, and ate two big bowls. Thanks for the recipe.

Holiday Cranberry Chutney

Reviewed: Dec. 24, 2010
I took others' advice and used orange juice instead of water, added apple cider vinegar and orange zest, and popped the cranberries against the side of the pan as they cooked. Somebody better send me a padlock for my refridgerator because if this makes it to tomorrow's dinner it will be a Christmas miracle!

Okay, Pamela, you're either my new best friend or worst enemy for showing us how to make delicious ice cream in 5 minutes! I used nonfat 1/2 & 1/2 and Splenda. Delicious!

Hummus III

Reviewed: Jul. 31, 2010
Delicious and easy! I just used 2 cans of garbanzo beans instead of meauring 2 cups. Be sure and add 1/2 tsp of cumin for a more authentic taste. I'm taking it to a pot luck tonight with a fresh veggie plate. Impressive but simple! Thanks!

Love this except for the eggplant being a little mushy. Maybe I didn't slice it too thinly...?

This had a good taste, but the consistency was weird -- way too gooey and sticky.

Wahoo -- My allergies are gone and my sinuses are clear! :-) This recipe is sooooo spicy, but so good that I gobbled it up in a flash. Thanks for an easy recipe that's also very satisfying.

Ambrosia Salad

Reviewed: Apr. 20, 2010
I took this to a pot luck the first time I made it (always a leap of faith, but with so few ingredients I thought I was safe) and it was a big hit! I used fat free sour cream (we have Tillamook brand here in Oregon, and it's fantastic) and you couldn't even tell. Not the healthiest "salad" in the world by any means, but definitely a crowd pleaser.

Fabulous Zucchini Grinders

Reviewed: Apr. 20, 2010
Sorry -- I just wasn't happy with the way these turned out. Yes, they are very easy to make... but so boring. It did inspire me to add a lot more stuff next time -- peppers, onions, mushrooms, meat substitute -- then maybe it'll be worth 5 stars. But as written, this is a very plain sandwich.
