Vegan Lasagna I
I didn't actually eat any of this, but my vegan daughter really enjoyed it. I used rice noodles that I didn't have to boil ahead of time. Two packages of spinach were enough. I sauteed the onion with some red bell pepper and mushrooms, which gave it more flavor, I think.

Vegan Black Bean Soup
Really liked this! Super easy -- I threw everything in the crock pot. It was the perfect dinner to come home to on a cold night. My vegan daughter sprinkled corn chips on hers, and ate two big bowls. Thanks for the recipe.

Holiday Cranberry Chutney
I took others' advice and used orange juice instead of water, added apple cider vinegar and orange zest, and popped the cranberries against the side of the pan as they cooked. Somebody better send me a padlock for my refridgerator because if this makes it to tomorrow's dinner it will be a Christmas miracle!
