Spanish Flan

My first time making flan and it tasted great! Carmelizing the sugar took a lot of patience, and I didn't do the best job, so I'll have to work on that next time. The only other problem I had was getting it out of the pan... I made it in the evening and once it was cooler, I put it in the fridge for the next day. I had to soak the pan in warm water to loosen up the carmel before I could get the flan to come out.

Chili-Lime Chicken Kabobs

Great! Made these Saturday for a dinner party and everyone loved them. Flavors were great, cooking time was right on with the grill. For veggies, I used zucchini, onions, and bell peppers.

Pear Crumble

Split Pea Soup with Rosemary

I made this yesterday and it is fabulous! I've never made split pea soup before, but I love rosemary so I wanted to give it a try. **2011** I still make this frequently in winter time. It is a great recipe-- tastes wonderful and is very filling.

Slow Cooker Tapioca Pudding

Came out good, but I suggest making sure the eggs, milk, and sugar are well mixed before hand. I did have some parts of the pudding that were clearly just egg. I like the simplicity of this though because tapioca takes so long on the stove and is so easy to burn if you aren't patient!

Chicken Veggie Casserole

Very good. I had to cook mine another 20 minutes or so to get the potatoes cooked through. I suggest that folks just make sure to cut the potato into 1/2" chunks to bake it in the suggested time.

Raspberry Pie III

The filling was great! I hadn't used tapioca before as a thickner and it really worked well. I wasn't pleased with my crust-- I tried a new recipe that used oil and it just didn't crisp up well.

These were great. I did make several substitutions-- applesauce in place of the oil, egg whites instead of the whole egg, and fat free milk in place of the buttermilk. I loved them!
