Hummus III

I agree with other reviewers-- less tahini. I used 2 cans of garbanzo beans and 2 tablespoons of tahini and that was a little too much. I'm going to blend some more beans in tonight to mellow it a little. Otherwise, it's great and I can modify to suit my tastes. Husband also liked it.

Lite Carrot Cake

Very good, but I've lightened it even more.... no oil, no buttermilk. I use 1 cup of unsweetened applesauce instead. For the frosting, I use a light or fat free cream cheese. My family knows that I do these little tweeks and my aunts are always impressed that they can't taste the difference.

Fudge

This is the recipe I always use from my roommate. Turns out great every time. I've altered and used different stir-ins--- nuts, mashmellows, PB chips, butterschotch chips, mint chips. All are great. I always line the pan with foil and spray with a little pam to make it easy to remove.

Peppermint Meringues

Yummy! I've done these w/o peppermint and used different flavored extracts. All were great. People loves these because they are light, fluffy, and just melt in your mouth. My dad couldn't get enough of them at Christmas a few years ago.

Raspberry and Almond Shortbread Thumbprints

I made these last Christmas (2010) with leftover jam in the fridge (I had both blackberry and sugar-free blueberry). I did not put the extra icing on top, because they are plenty sweet without and, despite the holidays, I do try to cut back where I can. Word of caution--- do not chill the dough. I made four batches of cookie dough ahead of time and then had a marathon baking day. These do not roll out well when chilled. They really need to be soft.

Fresh Broccoli Salad

I love broccoli salad-- but hate to buy it at the store because they use too much mayo and the fat kind. I always use fat free or light mayo, and then I don't feel guilty. Really, it's just to keep everything sticking together and a little creamy. I don't notice the difference, except around the waistline!

Vietnamese Fresh Spring Rolls

I love these! I only use the veggies though because I don't like shrimp. I like the hoisin sauce for dipping best. The tricky part is learning how to roll it all up in the rice wrapper. I'm still getting the hang of it, but the tighter you can wrap the better they will be, and make sure you don't put the filling to close to the edge because it'll make your life difficult.

Slow Cooker Beef Stew I

I've done this both in the slow-cooker and on the stove-top (faster). I sauteed the mushrooms and onions first, and probably increased the veggies more than what is posted. Last night (2/1/11), I used steak that had been in the freezer for awhile and my husband thought it would be too tough on the grill, but it was great in this stew! I also used whole wheat flour, instead of white flour.

My Favorite Chicken and Wild Rice Soup

Very good! I didn't use the lemon juice or packaged wild rice. I had a big container of wild rice, so I added a cup of that with some oregano, thyme, garlic salt, and black pepper. Also ommitted the garlic.

Baileys Espresso Martini

I had two friends over for a "martini sampling night." My husband mis-read this and first made it with kahula instead of the shot of espresso and we all loved it like that. Then he made it with the espresso and we all thought it was way too overpowering.

Rainbow Clown Cake

My niece loved this cake for her 4th birthday! I only did four colors-- red, yellow, green, and blue. It looked fabulous and my brother and his wife were quite surprised by the cake. Definitely a HUGE hit with kids! I made it as an ice-cream cake with berry sherbert between the 2-9" cake rounds, then covered with cool whip and pink sprinkles. My niece kept wanting to open the freezer to look at it.

Baked Sweet Potato Sticks

Fabulous! I was addicted to these for quite awhile. I usually dump on Chili Powder and a little Cayenne for some heat. I bake at 425 for 25 minutes. Made them when my brother was over and he couldn't get enough of them. Oh, and I usually use yams.

Spanish Flan

My first time making flan and it tasted great! Carmelizing the sugar took a lot of patience, and I didn't do the best job, so I'll have to work on that next time. The only other problem I had was getting it out of the pan... I made it in the evening and once it was cooler, I put it in the fridge for the next day. I had to soak the pan in warm water to loosen up the carmel before I could get the flan to come out.
