Beer Butt Chicken

This was so AWESOME!!! I followed the directions and it came out great. I had a 4 1/2lb. bird and it cooked in 2 1/2 hrs rather than 3. I mixed some Montreal grill seasoning into the melted butter and added it to the can as well. I took some x-tra melted butter and seasonings and basted it every 1/2 hour. The skin was golden and crispy and the meat was tender and juicy. I used what was left over (pretty much just the bones) and simmered it the next day for a small pot of chicken soup. The broth had great flavor! Will make this part of our regular meal rotation.

Crazy Crust Pizza Dough

after reading the mixed reviews I was afraid to try this one. I am soooo glad I did! Be advised this is not a "dough". It is more like a foudation for you to put pizza toppings on. I also used 1 egg and used 3/4 c regular flour and 1/4 c. wheat flour. I added onion & garlic powder, dried oregano, basil and a pinch of rosemary. I let it rest for 10 minutes after mixing. I buttered a 11X13 flat metal roasting pan and then I sprayed it with olive oil. I poured in the batter and cooked for 10 minutes. I removed it from the oven, sprayed with olive oil and sprinked with Asiago cheese. Returned it to the oven for 10 more mins. I took it out again, topped with sauce, mozz cheese, chopped green pepper, cubed ham and pineapple. Back into the oven for about 8 more minutes. When it was done I was able to lift the whole thing right out of the pan with 2 spatulas to a cutting board. It did not stick AT ALL! The crust was very thin, like a pita or a tortilla and the toppings do soften it up. The outer pieces were crisper than the center and the edges were "cracker like" in crispness. We thought it had good flavor and my kids loved it. Be careful not to use too much sauce or wet toppings if you are concerned about a soggy bottom. We did eat the center pieces with a fork. Overall it was so easy to make, very versitile and pretty tasty. Try it with an open mind and I think you will be surprised! Will make again with other topping like a mexican pizza.

Coconut Shrimp I

ok, I know it says shrimp, but I used bite size pieces of chicken and it rocked!!! It bit of labor, and messy to prepare, but sooooo worth it. I made the sauce using the orange marmalade, dijon mustard, a bit of honey and a dash of hot pepper sauce. Too good for words!

Apple Oatmeal Cookies II

Overall this was pretty good. I did tweak it here and there and it lasted about 10 minutes with the kids in my home day care. I used regular butter not margarine, added 1/4 brown sugar, used 3/4 c. of oats and 3/4 crisp rice cereal. I also added a handful of mini chocolate chips and 1/4 wheat germ. Rather than an apple I used a little cup of applesauce. I cooked them on a cookie stone, so no need to grease the pans. I mixed all the dry ing. in 1 bowl and the wet ones in another, then conmined them. I dropped teaspoonfulls onto the pan and baked around 13-14 minutes. They are a bit more like a cake type cookie and they are not super sweet. They do not spread out much so you can fit a lot on one sheet. Perfect for kids or if you prefer a lighter cookie. Will make many times more!!!
