Chocolate Mayonnaise Cake II

This really is a very moist cake. I made it a vegetarian-friendly recipe by substituting Vegannaise for the mayo. It was perhaps because of this sub that the batter was very thick, so I added an extra quarter cup of both the water and the "mayo". After that little remedy it was just right, and didn't even need to be frosted.

Broccoli and Provolone Quiche

I made this for a Christmas morning brunch, and it was fairly underwhelming. It's tough to put my finger on what made it so bland; I love garlic, onions, and chili powder, but something was . . . off.

White Brownies

These were very easy to make and turned out great! I used 2/3 cup and 1 teaspoon of milk, and the batter was very sticky, but not too difficult to smooth into the pan. It did take much, much longer to bake than the recipe stated, though. I had them in for 50 minutes and the toothpick was still coming out sticky, so I bumped it up to 350 for the last five minutes. Once cool, they taste fantastic!

Coconut Macaroons

Initially I followed this recipe exactly, and the first batch was very runny; I ended up with little puddles of condensed milk and islands of coconut. For the second batch I followed the advice of other reviewers and added 2/3 cup of flour. This somewhat decreased their tendency to spread, though they were still quite messy.

Mini Cheesecakes

This is a fantastic recipe. I used my own cookie dough and neufchatel cheese so that it'd be lower fat, and I even used fat free condensed milk with no difference in taste whatsoever. They looked beautiful, and I got tons of compliments! The only problem I have with this recipe is keeping them in the refrigerator - I keep eating them!

Cake Mix Cookies IV

This is the most versatile, easy to make cookie recipe I've ever seen. The cookies turn out perfect every time, the combinations are endless, and if people knew how easy they were to make I'd lose all my chef status! I've used just about every kind of cake mix and every kind of add-in and have never been dissatisfied.

Cheesecake Cookie Cups

These are easy to make and look exactly like the photo. I used Neufchatel cheese and fat free condensed milk to cut down the lipids, and they turned out just fine. My only complaint is that the part of the cookie that meets the cheesecake is a little bit soggy. Even that was minimal, so these are worth a taste.

Pumpkin Roll Cake

I didn't care for this recipe; it was more trouble than it was worth. The cake cracked in spite of the precautions other reviewers have mentioned and the flavor was somewhat bland.

Applesauce-Oat Muffins

These are a great recipe to use ingredients already in the kitchen. The inside is soft and moist, but the edges that touched the muffin pan were a bit chewy. I agree with other reviewers that extra cinnamon and a little nutmeg are nice additions.

Slow-Cooked White Chili

This is a decent base recipe, but like others I found it lacking in spice. I tried adding more cumin and some cayenne, but it was still pretty bland. I'm not sure what it was missing, but it definitely needed some more pep. No arguing with the ease of the crock pot, though.

Easy Key Lime Pie I

Five stars are not enough! I brought this pie to a block party and wrote the recipe down over and over. I followed everyone's advice and used 2 cans of condensed milk, a cup of lime juice, and four egg yolks. I also used a regular pie shell instead of a graham cracker crust, and it was fantastic. The texture and tang were amazing! Seriously great pie.

Vanilla Ice Cream VIII

Although easy to make, I have to agree with other reviewers that this recipe yields more of a vanilla slush than ice cream. Leftovers will also freeze into a solid lump of ice.

Sex in a Pan II

This is an easy, tasty recipe. My suggestion is to just follow the directions on the boxes for the pudding. My first attempt turned into a big chocolate brick, but when I re-did the pudding it was great.

Lemon Lush Pie

I'm not sure what went wrong here; the flavor of the filling was spot on, but it never set. It's more of a lemon mush pie than lemon lush. I knew it was going to be a problem when the first round of ingredients didn't thicken, even after 15 minutes of constant cooking/stirring. I followed the recipe exactly, as far as I can tell. If anyone has an idea what went wrong, please let me know. I loved the flavor, and I'd make it again if I could figure out the problem with the texture!

Spinach and Feta Pita Bake

This is a great "on hand" recipe, because of its versatility. I didn't have tomato pesto, so I used garlic hummus; I'm not a mushroom fan, but I substituted other veggies. Very delicious!

One Two Three Fudge

Even easier: microwave the butter and chocolate chips. Same effect, even less effort. Very easy recipe, decent results. The fudge is smooth, but starts melting as soon as it's removed from the refrigerator.

Easy Apple Crisp

This is a fantastic and simple recipe. I used prepackaged Boston Market caramel apples and it was even easier. I've never been a fan of most apple crisps because I don't like the oatmeal, but this was a spectacular alternative. The hardest part of this recipe is sharing it with others!

Country Corn Bread

Not particularly flavorful, but easy to make with ingredients that are always on hand. The texture is nice, and it cut very well. Next time I might add some jalapenos and cheese to spice it up.
