Simple White Cake

I found this recipe a month ago when looking for a vanilla cake recipe for my son's birthday and over all, made about 10 batches in about a week! I made sure to read the reviews first and am glad I did. The recipe definately needs some tlc to make it great! I used my kitchenaid mixer with the whip attachment to whip the heck out of each step. I used all butter and the cake was very nice. I found cupcakes only took about 18-20 minutes and not as stated. When whipped, it makes a nice, fluffy cake batter. A wonderful vanilla cake recipe!

Cinnamon-Topped Rhubarb Muffins

This is a very nice muffin! A good way to use rhubarb. I found that the recipe did not seem to yield 24 muffins, but more than 12, maybe 18? I did a combination of regular and mini muffins so I can't quite judge the quantity. I decreased the oil to 1/2 cup and the sugar in the muffins to about 3/4 cup. With the sugar on top, I wouldn't like it with any more sugar in the muffin. I also added a bit more rhubarb. I was a little sceptical about only 1 tsp baking soda for the amount of muffins, but with the buttermilk (in my case- lemon juice added to milk) did a great job. They rose wonderfully, more than many other muffin recipes I make. The muffins are moist and yummy. My kids loved them and so do I! I made two batches today.

Cranberry Almond Biscotti

I had a hankering for cranberry almond biscotti and came across this recipe. Definately a keeper! I rather liked the lack of fat in the recipe. The cookies don't need it, they are supposed to be dry. That's the point of biscotti. I did drop the vanilla to 2 tsp. however because I am a cheap cook and I buy good vanilla. 1 Tbsp is a little too rich for my blood for one cookie batch. They still tasted good. I also used whole almonds and that was just fine.

Chocolate-Zucchini Cupcakes

I have to say that I wasn't overly impressed with the recipe. As I was putting it together I realized that there wasn't much chocolate in the recipe so I substituted 1/4 cup of the flour for cocoa and added chocolate chips and even then it wasn't enough for my tastes. I am rating it 3 because it is a good cake, but when I make a chocolate cake (zucchini or otherwise), I want it to be chocolatey.

Quinoa Pilaf

Didn't blow me away. Used Chicken Stock instead of water and maybe that's what did it. Was a good side dish though.
