Whole Wheat Pita Bread

Best recipe ever. I only use whole wheat (fresh ground) and this recipe is amazing. It is really light and fluffy. I have cook it in the oven, on a griddle, in a wood-fired oven, and on a griddle over a camp fire. Great each time. For those who have trouble with it not being light, maybe your yeast isn't fresh. I have had problems with yeast being very slow and old (even though not past the expiration date). Now I have a batch that is very active and it is great. Proof the yeast to see how active it is. I would say add a bit extra if it isn't really active.

Pork and Shrimp Pancit

Wow this is SO good! My kids, ages 4, 6, and 7, loved it. The five of us were fighting to see who would get the last of it. LOL. I used super thinly sliced carrots (so they cooked quickly), regular cabbage (what we had), some chopped spinach, and powdered red pepper (what we had). We didn't have any rice noodles so I used rice. Amazingly good. Can't wait to try it with noodles!

Basic Crepes

Great crepe recipe. Easy and awesome. Added a little sugar for dessert crepes and as is for lunch. I used whole wheat flour direct substitution and the results were perfect.

Sourdough Starter - Wheat

The whole wheat starter is great. No store bought yeast needed. Believe it or not, the stuff floating around in the air is enough to produce a great sour dough starter and, according to sour dough aficionados, the only way to make "real" sour dough. Just take care of the yeast, no metal, anywhere from 60 to 80 degrees F temp is the best for beginning the starter. If it is too hot you can get weird things growing, too cold, well it just takes a while to get going. Follow the directions and feed your starter. Store in the refrigerator once it is going and feed every week to keep it alive.

Hot Spiced Christmas Wine

I have quite a few different spiced wine/mulled wine recipes and this one is great. Personally, I like it better than with the honey. Honey can make the wine too sweet for me. This is simple and perfect. I used all red wine though and Grand Marnier instead of brandy. Great recipe!

Vegetarian Kimchi

I have never had "authentic" kimchi so I can't rate the recipe that way, but this recipe is delicious. It was a hit with my family and guests. I have made it twice, once a veggie version and once with one TBSP of fish sauce. I ended up soaking the cabbage in salt for about 3-4 hours. I did not have persimmons, so I used one sweet apple instead. I used about two tsps of good quality hot chili powder (the kind from an asian grocer) and it was spicy but great. I offered rice with the kimchi and some had it over rice, some just ate it straight.

Best Ever Pie Crust

This pie crust is perfect. I use butter because I hate the taste of crisco. I have NO problems with this dough being sticky or harder than other crust dough to deal with. You do have to make sure you refrigerate it or it is soft and sticky (as with all pie crust).

Pizza Dough III

Best pizza dough recipe I have found. I use 1 cup whole wheat flour and 1 cup all purpose. Add extra wheat until it is a dough consistency. Let it rise once. Cook it 10 minutes first, then put ingredients on. It is great!

Enchilada Sauce

Awesome! I used a lot less chili powder because the type that I have is super hot. Also some confusion might be in chili powder for chili and chili powder like ground up hot chili peppers. I am using the hot chili pepper kind and it is way too hot for me.

Carrot Cake III

Best carrot cake recipe ever! People who don't usually like carrot cake LOVE it. I make cake and cupcakes with this recipe. Cupcakes cook for about 25 - 30 minutes and make a ton of them, medium sized about 30 cupcakes. I add more spices because I like it spicy, about 3 tsp cinnamon, about 1/2 tsp allspice, and about 1/4 fresh nutmeg. I also use less sugar for the icing about 3 cups but I start with 2 cups and taste it until it is just right. This icing is a HUGE hit with everyone, even people who don't usually like cream cheese icing. The cake is really moist and I have always used parchament paper so I have no problems getting the cake out of the pan. Best carrot cake recipe ever!!!!

Super-Delicious Zuppa Toscana

This recipe is so easy, forgiving, and delicious! I substituted bouillon cubes for broth and milk for cream since it was what I had at the time. I also didn't have spinach so I used collards (it is what I had on hand). I finely chopped spicy sausages since I didn't have it ground. The soup was delicious. Served it with homemade bread and some wine - a perfect meal. My husband and guests loved it - the guests wanted the recipe.

Banana Banana Bread
