Greek Veggie Salad

I added marinated artichokes to this recipe. It was an interesting, unique addition to our pot luck. Left overs didn't stay great in the fridge for long (maybe a day or so).

Not fabulous. Even after adding a couple of fresh sliced mushrooms and extra bacon there was really no saving this dish. This recipe with additions could have potential, but I don't feel it's worth the effort.

Mexican Zucchini Cheese Soup

This recipe is okay as is but seems to be missing something substantial. I tried adding some spicy sausage to it, but it wasn't enough. I think next time I would add a can of Mexican hominy to it and beef it up a little more.

Cauliflower with Dijon Sauce

I was pleasantly surprised stumbling on this recipe; would have liked to have less mayonnaise however. next time I will reduce to 1/4 cup same as the dijon.

Crispy Rosemary Chicken and Fries

I enjoy this recipe partially because it makes my house smell so great when it's cooking, and partially because it's tasty. Best to finish the first day, you know the second you no longer have that 'cripiness'.

Original Ranch Pork Chops

I have made these twice now, they are rather delicious. I just wish my chops had more crispiness on the outside which is something you can really only get pan frying. None the less, this recipe will be a staple I'm sure. Not what I was expecting for flavor.

Fried Cabbage with Bacon, Onion, and Garlic

I think I should have been more careful about when I added the salt. I dumped it into the meat rather then putting the cabbage first. It turned out ok, was still edible but next time I will follow directions. I also added some polish sausage to this dish to make it a more complete meal it was pretty tasty. Also, next time I will add the bacon last.

Irish Cream Brownies

We have made these twice now and they turned out pretty well. We needed to double the frosting part of the recipe to get enough for the whole pan. We'll make these again. We used the Reduced Fat brownie mix.

Tuna-Filled Shells

I tried to cut a little more calories out of this dish using skim milk and just a spritz of oil in my non-stick to sauté the veggies. I don't know that I would use non-fat milk again. It turned out great last night but I noticed that the leftovers in the fridge this morning had a bit of water resting in the bottom of the container. Separate from the sauce... Anyways, this recipe was good and I know we'll have it again. My husband liked that the tuna wasn't overpowering.

Microwave Mexican Manicotti

I did this is in the oven instead of the microwave method. We didn't use sour cream and I added a couple of tablespoons of taco seasoning to the meat when cooking it. Turned out great.
