Blackberry Cobbler

I've never made cobbler before, so I was a little intimidated, but thought I'd give it a shot after picking copious amounts of blackberries today! It was super-easy and tasted delicious! I didn't tweek a thing. I'll definately keep this on file. Thanks for sharing.

Alicia's Aloo Gobi

Yummy! It does have a bit of a kick (equivilant of say, a 3 star), so I'd suggest backing down on the cayenne a tad if you can't tolerate the heat. This is the first indian dish I haven't bombed thus far.... so I definately count this as an easy meal! Relatively cheap, too. If you already have all of the spices on hand, the rest of the ingredients add up to about $10. ***updated*** I previously forgot to mention that I omit the garam masala (it changes the flavor and I like it better without). Additionally, cutting the cayenne pepper by about half allows one to be able to taste the wonderful flavors instead of mostly just feeling the heat. Hope this helps!

Crustless Spinach Quiche

Fantastic! I will definately make this again! Variations as follows: Instead of the 3c cheese, I used 1/2 c sharp cheddar + 1 c ff cottage cheese + 1/4 c parmesean. I also added a small can of diced green chiles (but will toss in a few jalepenos next time to kick it up a notch) and tomatoes. Also thinking some feta and pinenuts would be yummy! I didn't have a pie pan so I used my 9x9 square and had to bake it 10 extra minutes. Ate the leftovers for lunch and dinner today!

Fruited Tofu Curry Salad

Very yummy. I am withholding the full 5 stars, though, since I reserve those for recipes I consider "outstanding". I brought this for a potluck to work and received many compliments. As mentioned in previous reviews, I would recommend you saute the tofu in olive oil with a few middle eastern spices for added flavor (I used garam masala, cumin seeds, and curry powder). I also decreased the amount of yogurt by about 25% and added a drizzle of honey. Served plain (not with pitas) and it was very good.

Thai Curry Tofu

Even with the modifications suggested by the other reviewers, I still found this a bit bland. The kids refused to eat it. I thought it was simply "okay". I didn't throw out the leftovers, I'll still have it for lunch tomorrow. I don't believe I will try this one again.

Rae's Vegetarian Chili

Yummy! Even the meat-obsessed males in my household gave this a two-thumbs-up. The only variations I made were as follows: Added 1/2 onion to saute mix, omitted garbanzo beans, used frozen instead of canned corn, omitted cheese, and used Boca Burger pieces as suggested. The only gripe I have is that it isn't as spicy as I like - I'll have to play around with it next time to amp up the fire! This recipe made plenty... I'll be freezing some for future use.

Ty's Barbequed Chicken

Pretty good, but not something we're raving about. Definately NOT a typical BBQ sauce taste. I thought of it as more of a marinade. I let mine marinate overnight and they turned out great; flavorful and tender. Another plus was that the ingredients were all things I had on hand... always a good thing :o)

Greek Pasta with Tomatoes and White Beans

YUMMY! I made a few tweaks to up the nutrition and decrease calories. -Used whole wheat pasta -Doubled tomatoes -Doubled spinach -Used fat free feta I only made a half recipe because I knew my kids wouldn't touch it. Half recipe still made a LOT; I got 3+ meals out of it. I will definately make this one again.

Roasted Red Bell Pepper Soup

Pretty good, but not fantastic. The texture was a little gritty for my taste. I thought the flavor was great, though. My 5 yr old loved it, my 3 yr old gagged :o) The changes I made upon previous recommendations: Added 16 oz tomato sauce Added fresh basil (yum!) Used vegetable broth instead of chicken Roasted peppers by cutting in half and placing face down I'd like to try this recipe again since the flavor was so yummy... but maybe not puree the beans??? If anybody has any suggestions, please let me know.

Cha Cha's White Chicken Chili

FANTASTIC! I do have to agree, however, that we must call this what it is - soup. But FANTASTIC SOUP! The variations I made: -Pureed one of the cans of white beans -Added one can of Black Beans -Added frozen corn -Used only 1 Tbs Jalapenos -Added extra can green chilis -Added dollop of fat free sour cream to each bowl -Omitted cheese in soup, but sprinkled some on top of each serving -Used one whole rotisserie (sp?) chicken instead of cooking my own -Used 1/2 called for cayene pepper -After cooking onion, threw rest of ingredients in the crock pot on low for 6 hrs Made MUCH more than 4 servings! My crockpot was full. This resulted in a yummy, yummy soup. Spice mild enough for my 3 & 5 year olds. Hubby and I added some extra jalapenos to each of our bowls to kick ours up a notch, but it was plenty good without it. Served with cornbread - mmmm! THANK YOU, THANK YOU, THANK YOU!

Tamale Loaf

Great flavor, even the kids liked it. Turned out kind of mushy (like mashed potatoes), so the texture is the main reason I probably won't make this again. But if you like more of a casserole consistancy, it's really pretty good. I would also tweak the salt content. It calls for 2 teaspoons, but that's too much for my family's taste. You could probably half it and it'll be about right. It was a refreshing change to regular meatloaf.
