Erin's Indonesian Chicken

My husband and I liked the sauce, but kids didn't. Didn't have any honey, so I used apple butter instead. Weird, I know. But it was good. Didn't have any chili paste; used a couple of dashes of ground cayenne pepper and red pepper flakes. I will make this again, fo sho!

Salmon Burgers

I used two frozen salmon filets that I bought at Walmart, cooked on George foreman grill, added some garlic and a couple of tablespoons of plain yogurt. Doesn't even taste like salmon! Yummy

Corn Muffins

Here's my healthier version: I used oat flour instead of all purpose flour, to make them gluten free. I used 1/4 cup of Stevia in the Raw instead of sugar and added a mushy banana to the wet ingredients. I used 1/4 cup of coconut oil in place of butter. I will use only 1/2 tsp. salt next time. Tasted so yummy!

Monster Cookies

I modified to make it healthier: halved the entire recipe; instead of butter, I used 1/2 unsweetened applesauce and 1/2 extra virgin coconut oil; 1/2 stevia and 1/2 regular sugar; 1 c. Ideal brown sugar, oat flour and brown rice krispies cereal. Used chopped bakers chocolate instead of choc. chips. They were yummy, but didn't change shape when I baked them and a little dry and crumbly. I also had to refridgerate the dough for a few hours before I could actually bake them.

I used coconut oil instead of butter and added raw honey to the oil and used 1/4 cup oat flour instead of crackers. I'm in love with this one! served with cooked spinach sprinkled with lime juice.

Chicken and Pumpkin Goulash

I just threw everything in the crockpot, raw chicken and all, and cooked on low for 5 hours. Although I did use 1/2 can pure pumpkin instead and left out the tomatoes, coriander, and cornstarch b/c I didn't have it. I added 1/2 cup water instead of 1/4 cup. Added some garlic and cayenne pepper. So yummy and healthy!

I just sprayed with Pam and seasoned before cooking and after cooking, tossed with about 1 tbsp. Olive oil and a little more seasoning...couldn't stop eating them!

Buttermilk Pralines

This recipes must be for the pros. I tried to make this, first time for making pralines. Don't have a candy thermometer, so I just guestimated. I had to pour it all together in a dish b/c it was too thin and liquidy, it's in the fridge now. I also used almonds instead of pecans. I just wanted some way to get rid of all the buttermilk I had; it worked.

these are soooo addicting! I have to give some away to neighbors so I don't eat them all! Left out the walnuts, didn't have any. Have to keep them cold so they don't turn to mush, yummy!

Spooky Witches' Fingers

such a fun recipe! I love baking cute and different things. It's not supposed to taste the greatest, it's mainly supposed to look cool. They freaked my husband and 5 year old out. Time consuming though. I used sliced almonds, looks more like finger nails. Added green food coloring to dough and choc. chips for warts here and there. The kids had fun making them.
