To enlighten The Alchemist about the Buffalo in Buffalo wings. They originated in the Anchor Bar in Buffalo, NY (been there, ate there, loved it). Their fiery sauce is made on site, but there are many good bottled types available. They're served with a side of celery and blue cheese dressing to cool your mouth in between bites of the spicy sauced wings (no, the dressing is not for dipping the wings). Since original wings are deep fat fried, then tossed in butter, then the sauce, this recipe is a very healthy alternative.
