Potato Enchilada

You are right-it looks disgusting, but the important thing is that it tastes great! My 6-year-old, my hubby, and I all liked this very much. My 3-year-old wouldn't touch it, but that's nothing new. We loved the queso sauce. Hubby has requested this become his Sunday night meal, while he watches Sunday Night Football! I guess it's a real manly man meal! LOL! Thanks for sharing. It's great to have some new recipes to try!

Breakfast Rounds

THANK YOU! THANK YOU! THANK YOU! Yes-I mean to shout this at the top of my lungs. This is probably the quickest, tastiest breakfast I've ever had. My 3-year-old who prides himself on eating nothing ever, LOVED these. I've tried every breakfast known to man to get him to eat. I was skeptical of this recipe, but out of desperation gave it a try. It just proves the old addage, "don't knock it, til you try it." My son ate 2 1/2 of these. My 6-year-old ate all of hers, and I had one too. We all loved it! My son called his dad at work, and told him he would make him one this weekend. I think this will be a great back-to-school breakfast too! I guess you can tell, our family gives this recipe a 5-star rating! Thanks again for sharing!

Nacho Pie

This is very good! It's a warm-the-tummy meal. I can just see eating it in a mountain cabin on a ski trip.( It reminds me of Frito Pie!) My husband LOVED it. In fact, he has requested that it be a "tradition" on Monday nights when he watches his football games. I used the Hormel Chili with no beans. I think next time I will garnish it with some other Nacho things like tomatoes, sour cream, guacomole, and hubby says especially sliced jalapenos for him. Thanks for sharing. I love these kind of filling, easy-on-the-budget homecooked meals

Potato Cheese Soup

This is very good soup. It's a little time-consuming with all the chopping involved. It's not as thick as usual, but that's ok with me. I definitely will make it again on a cold day. I only used 2 tablespoons of butter instead of a half cup. That's too much grease for me!

Best Italian Sausage Soup

This soup was excellent. I used shredded carrots in place of the zuchinni, and I just realized that I forgot to add the noodles. It was great anyway though. I threw everything in the crockpot, and it was done in the evening. It got rave reviews from all. I served it with french bread, and garlic spread submitted by Natalia. It was a great meal. We didn't even eat the salad because the soup and bread were enough to fill us all up. Thanks for the great recipe!

Garlic Spread

This was yummy, yummy, yummy. It came out the consistency of buttercream frosting, so it was very easy to spread on the bread. It is very light, and great for summer. You can taste all of the flavors, but it isn't overpowering. My 6 year old practically ate a loaf of bread herself with this spread. All the adults, and kids raved about it. This will definitely become a "family favorite." Thanks for the great recipe. I served this on french bread, along with "Best Italian Sausage Soup submitted by Perri Pender. The soup was sumptious too!

Creme de Menthe Bars

AWESOME! The first time I made these at Christmas I did it from scratch, but the next time instead of all the effort, I baked a batch of boxed brownies, and still did the topping the same. We liked it better! The topping is sooooo good! It will definitely become a holiday tradition at our house! Thanks for a great holiday treat!

Tantalizingly Tangy Meatloaf

EXCELLENT! We had guests, so I needed to stretch the recipe. I doubled everything, and I did 1 lb. of ground beef, and a 16 oz tube of ground pork. I also added 1 chopped onion, and 1 chopped bell pepper. The only preserves we had in our area was apricot- pineapple preserves, and it came out very yummy! We all loved the way the sauce really "stuck" to the meatloaf like a glaze. Our guests took the recipe home, and it will be the first time the wife ever makes a meatloaf. My oven cooks a little on the slow side, so it took about an hour and a half to cook! Well worth the wait!

Hobo's Delight

My whole family loves these! We've had this dish several times. I like to see other variations, so here's what I do a little different. I add about a tablespoon of cream of mushroom soup with garlic on top of the raw meat before adding the veggies, and closing the packet. That way it makes it's own gravy, and it is GOOD, GOOD, GOOD! Thanks for the great recipe, Michelle!
