Irresistible Irish Soda Bread

Amazing! Love it! I have never made Soda Bread myself before but I have tasted it. This was a perfect texture, very moist. I made it with Special Irish Beef Stew and the two didn't really go together. This isn't really a dipping bread. If I wanted to make it a dipping bread I would cut back on the milk or add and extra 1/2 cup of flour and cut the sugar down to maybe 1/4 cup and not add craisins (which I used because I didn't have raisins). Hubby and I both think this is a keeper and next time I think I'll make it for a breakfast bread and add a tsp of cinnamon and eat it cold (make the night before) with jam. I boost the sugar to 1/2 cup this time and for a sweet bread that was perfect. Cooking time was also perfect. 325 for 70 minutes and it was amazing. Thanks for the superb recipe!

Indian Saffron Rice

Amazing recipe. For those who said it was bland... I don't know what you were eating. I used the saffron strands from a Middle Eastern grocery store. I used about 2 tsp (for a double recipe). I crushed it by hand before I boiled it in the water. I didn't strain it but left the saffron in the water. Went exactly by recipe the first time and it was yummy. Made it again and used one chicken bullion cube (in place of half the salt) and I added a splash of white vinegar and a couple sprinkles of sugar as suggested by someone else. It was amazing. Next time I will probably use double the saffron cuz I like a strong flavor. My husband said he could just sit there and eat the rice even WITHOUT the coconut curry chicken over it. lol. I am trying to figure out how to incorporate it into more meals like fried rice, etc. Excellent recipe.

Brooke's Best Bombshell Brownies

These were delicious! I made a half recipe in an 8x8 pan since I was short on eggs and butter. I followed it almost exactly except for using 1 cup white sugar and 1/2 cup brown. They were the perfect consistancy. I didn't have chocolate chips but I will use them next time cuz I think they will taste delicious in this recipe. 25 minutes was not enough for this smaller pan but 30 minutes was PERFECT. Will make again and again (delicious with butter pecan ice cream).

Sweet Restaurant Slaw

Yum! This was so easy to make. Nice to be able to make something that can normally cost so much premaid. I did use only 1/3 cup of sugar and it was still maybe a little sugary. Probably will cut down to 1/4 cup next time - and I did use mayo, not miracle whip. I also did half and half poppy seeds and celery seed since celery seed is originally in cole slaw. Thanks!

Baked Kale Chips

Made these probably 10 times now. It's official. I am addicted. My best tip - they dry out faster if you spread them out and give them space. Otherwise, it takes longer and then some get burned. I usually make a full bunch of kale in 3 batches. I make them basic but I also like them with a bit of garlic powder. Oh yeah - and if you put them in a plastic container - MAKE SURE they are 100% cool first or they will not be crunchy the next day.

Layered Mousse Bites

Love 'em! I am not a big fan of Jell-o but my grandma asked me to bring a Jell-o side dish for a family get together and I thought of these. They worked out great. I used lime and everyone loved them and they were so easy. I tried orange after that and those were yummy too.

Cream Cheese Frosting II

Wow. Awesome flavor. My whole family loved it. I used this frosting for pumpkin spice mini cupcakes. I first made it just as the recipe said and it was perfect for my taste - just a bit tangy (I did add cinnamon to taste). But I wanted it more like a thick buttercream consistency for piping on the cupcakes so I did add another 3/4 cup of sugar. The consistency was still a bit too soft and I honestly preferred it before adding the extra sugar. Oh well. Next time I will keep it as written. And to those who think it should be sweeter and that's why they add more sugar - just remember. If you wanted a sweet frosting there is always buttercream - cream cheese frosting isn't meant to be so sweet. I will continue to use this recipe again and again! Thanks!

Homemade Black Bean Veggie Burgers

Yum! I really enjoyed these. My kids liked them too. I was way short on chili powder so I subbed curry for most of it. Otherwise I followed it close to exactly. I didn't dry off the beans as some suggested but I did "wring out" the onions and peppers and I used 3 eggs for my doubled recipe. I baked 4 and froze 4. I didn't have any chipotle mayo as some suggested using on top but I did put a little sour cream on it and I ate it bunless - it was a good low carb meal. Thanks!

Fruit Dip VI

I LOVE this recipe. My mom made something similar when I was young but she couldn't remember it and I couldn't either. I've been searching for years for something comparable and this is it! I usually make it with light cream cheese - same flavor, less fat and easier to mix up. I also add chopped nuts sometimes - and sometimes I don't. Awesome either way. If I use regular cream cheese I add a splash of milk before I use the hand mixer and it helps thin it out a bit. The recipes calls for it to sit for an hour before serving - I have NEVER done that. I either serve it right away or chill for 10 or 15 minutes and it's never been anything but delicious and it's never been grainy. It's our fave with apples. Yum! Awesome recipe!

Chocolate Pretzel Rings

Love 'em! We are sending a big tin of these across the country to family for Christmas time cuz they are simple and I think they will ship well. We used the candy cane kisses (white with red stripes) and they melted perfectly at 2 minutes. FYI for everyone making them the first time - just because they don't LOOK melted doesn't mean they aren't. Stick your finger in there at 2 minutes and check - mine were still standing tall but they were melted through already. I plan to try these with a bunch of other flavors and with Reeses Pieces instead of m&ms also. I can't speak for all the kiss flavors but the candy cane ones took a full 20 minutes to cool in the fridge. Fun little project to do with my daughter. Thanks! Oh - almost forgot - we found a big bag of round pretzels for cheap at Aldi.

Cheese Ball I

My family RAVED about this cheese ball recipe. I made it with one regular cream cheese and one light cream cheese (just to cut back on a few calories and make it a bit more spreadable). In addition, I used Light Hellmanns' mayo instead of full fat. The texture and taste were not compromised one bit. I also doubled the dried chives and added a bit more garlic powder. Otherwise, I followed recipe. I spooned it into a large piece of tin foil and semi-shaped it into a ball before I wrapped it up. I unwrapped it the next day and rolled it in a combo of crushed sliced almonds and dried parsley. Everyone loved it! One ball was the perfect amount for a 4-pack box of Ritz crackers. I will most certainly make this one again.

Sweetened Condensed Milk

I love it! Yummy and so easy! Worked perfectly in the granola bar recipe I use from allrecipes (Easy Granola Bars). I did as someone else suggested and changed the servings to 23 - it did turn out thicker than normal SCM so if you need it a bit thinner just add water a Tbsp at a time. Thanks for a great recipe.

Frank's® Red Hot® Buffalo Chicken Dip

I followed this almost to a T. I used light cream cheese cuz it's what I had, I chose to use Franks's wing sauce and I used blue cheese. I also added a bit of extra sauce. I thought it was very delicious and I will make it again. The only thing I will do differently next time is use rotisserie chicken or maybe cook it in the crockpot. The canned chicken does have an odd stringy consistency, but still a good back up if you are in a hurry since the flavors make up for that. Yum!

Sausage Gravy III

This recipe was easy to make and tasted DELICIOUS! My whole family loved it. We gobbled it up. I only changed a couple small things - I DID NOT add the extra butter - it had plenty of sausage grease. I did add LOTS of pepper and added a few other spices. A little thyme and a little garlic powder. Just kept adding until the flavor seemed right. I can't say enough good things about this recipe! YUM!!!
