About this Cook
Married, homeschooling mom of three. Love to cook and bake. I'm always trying new things and pushing the limits on flavor!
My favorite things to cook
I love trying new recipes and desserts... still love to make comfort food like my mom used to make but now I try to make the processed ingredients from scratch instead. I am loving baking more all the time and have a slight cupcake obsession. Making cupcakes and frosting from scratch is new to me and I can't believe I used boxed and canned stuff for so long!
My favorite family cooking traditions
We just have our traditional dishes at holidays... green bean casserole, shrimp salad, pies, nothing too fancy. After Grandma passed away it became a tradition for my sister and myself to continue to make Grandma's cheesecake and Grandma's shrimp salad.
My cooking triumphs
Baking many new things I have never tried before. Granola bars, cupcakes from scratch, breads and my proudest recent accomplishment - Red Velvet Whoopie Pies with pink frosting for Valentine's Day. They were moist, delicious and so beautiful.
My cooking tragedies
There have been a few, but I try not to remember those!! Pretty much everything turns out as planned unless I don't watch it properly and it burns!

Apple Crisp II
I am giving this recipe a 4 WITH my changes. I saw a lot of reviewers say that granny smith works best here, but I already had Gala so I used those. The texture turned out great - the sweetness did not. And on top of that I used HALF of the sugar called for in the apples themselves - I cannot imagine what this would have tasted like with a whole cup! I did also add some nutmeg, which was a nice touch. I also didn't use the 1/2 cup of water, but instead a few tablespoons of orange juice to add tartness, but with all that sugar it still wasn't tart enough for me. As far as the topping - I doubled that and put part on the bottom, If I wanna make this 5 star, next time I will use Granny Smith, cut the sugar down to just a few tablespoons, use orange juice (a few Tbsp) instead of water, NOT double the topping (which I know was my fault, not the original poster's) and cook for an hour. I may also use less butter since it wasn't as crispy as I would have liked. Decent basic recipe, just needs a lot of tweaking and DEFINITELY the right apples.

Brooke's Best Bombshell Brownies
These were delicious! I made a half recipe in an 8x8 pan since I was short on eggs and butter. I followed it almost exactly except for using 1 cup white sugar and 1/2 cup brown. They were the perfect consistancy. I didn't have chocolate chips but I will use them next time cuz I think they will taste delicious in this recipe. 25 minutes was not enough for this smaller pan but 30 minutes was PERFECT. Will make again and again (delicious with butter pecan ice cream).

Asparagus Parmesan
Very yummy and so easy! I loved it. I added chopped fresh garlic and I used all butter and no oil. Will definitely make this again.
