Basil Shrimp

Not a bad appetizer! I see what people say about being a little salty (definitely next time..No extra salt!) I changed the ingredients a little: Used "I cannot believe it's not butter-spray" and I didn’t have any problems after they got cold. I used Dijon mustard and the flavor was great! I used already cooked shrimp (as I had those in my freezer!). Perhaps this is why I didn’t get the “grill-looking” appearance on the kabobs. Next time I’ll use raw shrimp. This is a keeper!

Rum Balls I

I really don't like to mix alcohol with sweets but my husband really wanted me to make these. Crashed everything in the food processor oh! And only had Malibu Coconut Rum (didn’t have regular) and the taste is unbelievable! I am hoping to hide them from my husband and wait a week for the flavor to incorporate! (Doubt they will “survive” with my husband around! :o) ) Great recipe. I will serve it at my upcoming Martini Party! UPDATE: I made them again and I mixed almonds instead of pecans (I confused them...don’t ask me why :( ) and they are not bad...but definitely they are much better with pecans

Strawberry Dream Cake I

I made this cake last night. I waited 32 minutes as some reviewer advised but it was still liquid. So I let it another 10 minutes. I haven't tasted it but there is a “big whole” in the middle of my cake. I am sure I baked it too long but it looked to me incredible watery. I mean, I understand it was going to be moist but this was almost liquid!. I will tell you later how the frosting comes up and if at least the taste is great! so far 3 stars for the recipe. UPDATE: I didn’t like it but my husband loved it! It seems awefully a lot of work for a cake that taste as a regular cake but very moist (even though I cooked it longer that I supposed..the middle of the cake was still liquid!) for the frosting I used strawberry cream cheese and I DID love it! I will use this in another cake!

Annie's Fruit Salsa and Cinnamon Chips

I really don’t understand why the recipe calls for sugar..I guess if the fruits aren’t in season you might need to sweet them up otherwise..you definitely don’t need the sugar. Time consuming: yes! Lot of cutting..maybe next time I’ll buy the chopper…I used, 2 golden apples, 2 kiwis, half cup of fresh pineapple, half cup of mango and only half pound of strawberries and it was enough! About the chips! Great hit! Bought 12” tortilla and cut them in 12 triangles. No doubt the idea of the muffin pan is the best! Make the chips scoopable :o) loved them!. Don’t get me wrong: everyone loved it and without the sugar and cirup the recipe is quite healthy but as some comments said: it’s a lot of time consuming for a fruit salad. Oh! I used “I cannot believe is not butter spay” on the first batch of chips and then I run out of it. So I used regular melted butter. I liked better the first batch! And on top of that NO CALORIES ON THE BUTTER!!! This is a keeper (as long as you have a chopper!)

Blueberry Cream Cheese Pound Cake II

Obviously the cake is as delicious as I thought. We were only 8 people and there were not even crumbs at the end! I used lemon cake and French vanilla pudding. There is NO NEED….repeat…NO NEED of sugar…(and I love sweet but this cake is sweet enough as it is!). I also used fresh blueberries and lemon drizzle. Next time I will use another type of pudding but definitely a keeper!

Cheese Fondue

My father-in-law is French and he loved it…followed the advise to mix the flour with the cheese BEFORE tossing it in the pot..and it worked. I didn’t have any problems with the cheese but maybe because I was doing it in an electric fondue…I read about spreading garlic on the sides of the pot…well.. I am a little lazy so I used already minced garlic and it tasted delicious (I don’t know if it will taste differently if you do it with a clove). I add the nutmeg, paprika, pepper and onion salt… really a keeper…but unless you are pouring money our of your pocket. do it only on special occasions.. I think I probably spent 25 dollars in good cheese.

Bacon Wrapped Chicken

Well…sorry but it wasn’t that great! The pieces were huge (even though I pounded the chicken) and didn’t look “inviting”. My guests ate it, I am sure, for courtesy! As some other reviews…the sauce is definitely I keeper…it was fantastic…maybe with another type of chicken…the chicken itself was incredible bland…oh! And for those worrying about the crispiness on the bacon…what I did after the 50 minutes baking was broil it for another 5 minutes and it came up crispy enough!

Absolutely Fabulous Greek/House Dressing

Personally, I thought it was horrible! Too much peppery for my taste (even though I didn’t use the entire amount listed in the recipe). I couldn’t even eat my salad! It was really bad. I am giving it 2 stars just because my husband thought it was good (we come from different cultures so I assume that’s why I didn’t like it!) but really…inedible! Now I have 2 big bottles full of something that we will end up throwing away.

Beer Dip I

Somehow I realized too late that the recipe called for 2 PACKAGES of cream cheese instead of 1. I tried to improvise with some left over sour cream (I don’t think it was even a ½ cup) and it came up delicious!! Everyone loved it!!! I had read some reviews stating no to use it with veggies but with pretzels or wheat thins and to tell you the truth.. I liked it better with carrots and celery than the crackers (but I don’t know if it’s because I messed up the ingredients :-). I made this on Friday and we had it on Sunday…no doubt the longer in the refrigerator the better taste! Definitely I keeper!

Rosemary Mashed Potatoes and Yams

Not a fan of yams or sweet potatoes (not even regular potatoes) and I loved them! Really tasty and I believe the secret is in the roasted garlic! My family loved them. I didn’t add the water from the potatoes as the consistency was already very light (I even would’ve reduced the milk a little next time). But all depends on your taste! UPDATE 5/12: I made them again with little changes: used minced garlic and put it in the oven for 30 minutes with the oil. used 1/4 of heavy cream instead of milk. again no water. and I add sheddar cheese...Oh my goodness! delicious!!! better than the first time Definitely a keeper!!!

Cornbread Salad

To be honest I didn’t particular like it but my family loved it! (I am very peculiar ? )....since I had kids coming over I cut the chili peppers in half the suggested amount and I mixed everything because I imagined it would be prettier all together…AND I WAS RIGHT! I loved the presentation... Really was a hit! PS/ I had 13 adults + 5 kids….I still have leftovers!!!

Sour Cream Chocolate Frosting

simple and what I like the most is the color and the texture. I followed some advised from the reviews as I used only 2 cups of sugar and I replaced the Vanilla with KAHLUA (I used 1 tbs). I also used I CANT BELIEVE IS NOT BUTTER instead of real butter. to be honest i like it and it break the calories in half :). thanks for this recipe. it's definetely a keeper.

Baked Slow Cooker Chicken

If what you want it’s an “everyday chicken recipe” this is not bad at all. I made this last night and my husband loved it. I took in consideration what some of the reviewers had to say and I did change the recipe a little bit. I used the potatoes (peeled..you MUST peel them otherwise it look like you cooked the dished 3 weeks ago..it doesn’t look good at all), baby carrots an onions along with the ½ cup chicken broth. I liked the idea of rubbing butter on the legs (I used 4 very large legs) but to make it a little “healthier” I used “I can't believe is not butter - Spray” and on top of that I sprinkled the spices…it came up great!...but again.. This is an everyday chicken…not a fancy dish! PS/Definitely take off the skin…it will absorb the flavor much better!

Prosciutto Wrapped Asparagus

OMG! this is a winner!!! it's not only easy to make...but SOOO GOOD!! I made it for new years and even the kids had it! I served it as appetizer and people didn’t have “enough room” in their tummies to have the main dish! The blanching is crucial! And using a very thin slice of Prosciutto is the perfect combination!
