Sesame Broccoli Salad

I used raw broccoli and honey instead of sugar. Good flavor. Even better with cooked,cold brown rice - This distributed the flavor better. Next time I think I will add chopped walnuts on top.

Carrot Salad

Love this. I spread this into a large Romaine lettuce leaf and call it carrot boats. My kids love this and it is a convenient food for travel. I noticed the type of honey I use changes the amount of sweetness. THANK YOU Colleen for sharing this recipe!

Casa Dressing

Very nice change from a creamy dill, mild "taco" flavor -. I used only 1/2 tablespoon of the cumin and it was plenty flavorful. Also used only half the cilantro and zipped it in with the dressing with food processor. We topped this dressing on a dark green salad with kidney beans, tomato, avocado,green onions and sprinkled cheddar cheese on top. Kids gobbled it up and asked for more.

Shredded Chicken Tacos

Oh Yes. Better than authentic shredded beef tacos and way better than any other chicken taco I have ever tasted. I went under on all spice measurements as my family is sensitive to spicy food. Added more as needed. The COMBO of spices is wonderful. My family and I are so grateful this recipe was shared online. It tastes so good and is healthy! Can't beat THAT.

Cuban Black Beans II

Not very tasty but doesn't taste bad either. Very mild. I can't imagine what it would taste like without the garlic. DON"T skip the garlic. My family enjoyed these beans - I put it in a bun to serve and told them it was Cuban Sloppy Joe's. I will add a few dashes of red pepper seeds next time.

Barlow's Blackened Catfish

I used fresh lemon juice (half a lemon) mixed with the melted butter (no lemon pepper). My kids don't like HOT so I prepared theirs without cayenne, then added it to make mine. As per other reviews I drizzled the italian dressing on-it did not take 1 whole cup. This is about a 7 out of 10 hottness if you use the recipe as is. I chose to serve this with Garlic Mashed Potatoes and Kickin Collard Greens! The meal altogether is heaven, just heaven. The kids love this one! Great leftover too.

Busy Day Chicken

Tip:don't use frozen or partially frozen chicken, dark meat is a must for a moist chicken in the end and cook 8 hours max. I use a 1970's Crock pot slow cooker. Remove the fat/skin if you don't want fat floating on the top. I made this a few times before it turned out really good. I love to use Sweet Baby Rays spicy BBQ sauce.

Grandma's Slow Cooker Vegetarian Chili

Vegans AND meat eaters will appriciate this. Hearty, filling and tasty. I used white beans instead of garbanzo and no green pepper(I dont' like green bell pepper) The second time,I used more chili and a dash of cayenne pepper, I like it spicy.I was very surprised at how good this is. Good kept in fridg for leftovers for lunch.

Kickin' Collard Greens

No kick to these collards. Followed the recipe exactly. I love collards and this is my second recipe to try making them at home. It is too plain for me. Edible but if your looking for collards with a kick...this is not it. Edit- I tried it again using twice as much pepper flakes (1 teaspoon), cooked the onions till almost carmelized and added a tablespoon of white distilled vinegar with the chicken stock- better. I pair it up with blackened catfish; together they fit the bill.

Simply the Easiest Beef Brisket

I cut a 8lb brisket in half and cooked both. I didn't have beer so I used one cup red wine instead. Two bottles of chili sauce mixed with 1 cup br.sugar, one onion sliced in bottom of roasting pan. I cooked it 3 1/2 hours with it tightly covered the whole time. THEE BEST brisket recipe I have tried. WARNING:cut as much fat off as you can - I didn't serve my "gravy" it was like greasy soup. LEFTOVERS: I want to share this treat - the next day my husband put the left over meat(which I had poured the sauce over)in the broiler and he let it crisp up with burnt bits...very good and still moist.

Flourless Peanut Butter Cookies

I made a mistake. The dough was a bit sticky so I just sprinkled flour to make it managable. They stayed in balls and didn't cook in the middle. So the next batch I pressed a bit and they where perfect. My husband loves these more than my own recipe. Must use good tasting peanut butter.

Slow Cooker Escalloped Chicken

Very good flavor. If you like stuffing and moist poultry, this is the dish for you. I omit the seasonings and use a large box of cornbread stuffing mix. I used margarine in place of butter once and no celery; it was not nearly as good. My family likes this served with a green vegetable and cranberry sauce on the side. No leftovers here!

Sand Cups

Fun for the kids. My 6 year old got a kick out of making the cookies into crumbs and was very excited to pick out his choice of the gummy treats for on top. MILD pleasant vanilla dessert for me (without the gummy stuff). I tried it again with lemon pudding and crushed gingersnaps and it was even better...but the kids didn't like my version as well. KEEP IT COLD. Chill the bowl and glasses if using them. Keep chilled completely till served. It is not as good room temp.

Red Pot Roast

OH HEAVENS!This is good. Taking advice of other reviewers I added one cup wine and 1/2 cup water extra and used a big roast. (I had to resist garlic,and onions) Glad I did, it is a fabulous taste that EVERYONE raved about.

Pizza Sauce and Dough

Simple dough to make. I started it in the morning and put it in the fridge till dinner(not overnight). I used whole wheat flour and it turned out great. The first pizza dough puffed up really high while in the oven and I needed to cook it longer so I rolled out the second one much THINNER and it was perfect. Lightly crisp on the bottom. The herbs in the dough make this recipe stand out from all the rest. My family commented on how good it was all night. As for the sauce,I didn't have fresh herbs but even with dried herbs this one is a hit and I will definately make it again. I appriciate the fact that I can make extra and freeze it for a quick meal another day.

Crunchy Cabbage Salad

Satisfying to my need to crunch and healthy to boot! Perfect dressing. Not too tangy or sweet, just right. The toasted sesame seeds are the key to this delightful salad.I did not have almonds. I don't care for fresh bell peppers so I left those out. I also split the red and green cabbage evenly as my kids favor the red cabbage. This would be very nice to take to a pot luck!

Tuna Patties

Big stuffing flavor. This was a hit with the kids and if you have little cooks in the kitchen this is an easy one for them to mix and make patties. I gave it three stars because the stuffing overpowers the other flavors. I will make this again with less stuffing and more tuna.
