Creamy Caramel Flan

This is possibly the best flan I've ever had, and it was so easy to make. You don't really need to tilt the pan to coat the sides with the caramel, as it will spread while it cooks. I can already tell I'm going to be making this frequently.

Homemade Black Bean Veggie Burgers

Wow. This recipe is awesome. I'm not a vegetarian, but I've been trying to eat better lately, so I decided to try these black bean burgers. I didn't have any cumin or chili sauce. I added a tablespoon of dried jalapeño flakes instead. The only problem I had was that they were a bit mushy on the inside, so each bite caused the patty to get bigger. lol. Even so, this was one of the best burgers I've ever had, including beef hamburgers!

Oven Fresh Seasoned Potato Wedges

I didn't really follow the recipe, except for the cook time and some of the spices. I used onion powder, garlic powder, white pepper, red pepper, seasoned salt and Cajun seasoning, and left out the cheese. They were perfect. I made some last night, and I'm making more right now.

Death By Garlic

This dish is so easy, and so good. It's better known as Aglio e Olio (garlic and oil). I only used about 1/4 cup of oil (possible a bit more - I didn't measure). I used a whole large bulb of garlic, which was probably a bit more than 10 cloves. I think adding anything extra to it would diminish it. I'm probably going to start making this once a week.

Fluffy Pancakes

These were the best pancakes I've ever had. I served them with homemade raspberry compote and whipped cream. It was a much lighter batter than I'm used to, but it yielded very fluffy pancakes.

Burger or Hot Dog Buns

They didn't rise very much, but the taste was great. I made hot dog buns, and since they were kind of small, I sliced the hot dogs lengthwise, and they were great. I'll definitely be making these again

Quick Yeast Rolls

The first time I made these, I thought there wasn't going to be enough flour, so I altered the recipe and added more. They turned out good. I just made them again and exactly followed the recipe. They were so delicious and fluffy. This recipe doesn't need to be altered. Don't add extra flour!

Amazing Pork Tenderloin in the Slow Cooker

This recipe really is amazing as the name says. I don't have a crock pot, so I cooked it in the oven, with some minor changes to the recipe. As someone else suggested, I used more garlic than called for, and cut slits in the meat, and pushed the garlic inside. I also cut up some red potatoes and put them in the pot. I just used a large pot with a lid, and cooked it for 2 hours at 250°F, then for another 70 minutes at 300°F, and it came out perfect.

Seared Ahi Tuna Steaks

This recipe is so simple and so delicious. I'd never made tuna steaks before, but my boyfriend's coworker gave us some tuna he caught over the weekend, and it came out perfect.

BBQ Pork for Sandwiches

Living in eastern North Carolina, I wouldn't even think of using a barbecue sauce on my pork, so I tried this recipe a bit differently. I use a 16 oz bottle of apple cider vinegar instead of the beef broth, and let the pork sit in that over night in the refrigerator. The next morning I set the crock pot on low for about 10 hours. It didn't have enough bite to it, so I mixed about two tablespoons of red pepper with a half cup more of vinegar, and mixed that in with the shredded pork before putting it in the oven. It turned out really well. I'll definitely be making this again and again. It's simple to make, and makes 8 sandwiches for a grand total of about $11 (including the buns).
