Awesome Pasta Salad

I had to bring a pasta salad for a 4th of July bbq and since I don't like the traditional creamy variety I was happy to find this one. I left out the cheese for the lactose intolerant family members and the black olives because some of my family dislike them. Even without those it was a great tasty salad and I got lots of complements on it. It made a TON! I had lots of leftovers and it was even better the next day.

California Style Israeli Salad

I had extra cucumbers and jicama on hand that I didn't know what to do with, this recipe was a perfect light, healthy use of those fresh ingredients. I did remove the seeds from the tomatoes before dicing them to keep it from getting too wet and mushy.

Hummus III

I made this for a party. It tasted great but it was too dry so it didn't stick to the pretzel chips or pita chips we dipped in it. Next time I make this I think I'll try adding the liquid from one of the cans of garbanzos.

Slow Cooker Pulled Pork

I've never made pulled pork before and couldn't believe it was so easy. I took other reviewers recommendations and used a 7lb pork shoulder instead of the tenderloin since it was for a party and I needed to feed a crowd. I let it cook overnight and then shredded the next day and cooked for an hour in the bbq sauce. Everyone loved it! This is too easy and tasty not to make again.

Sparkling Grapefruit Pie

I was given a huge bag of pink grapefruits and didn't know what to do with all of them. This was a creative new use for them. I liked the sweet and sour combo with the strawberry gelatin. I would make this again if I had an abundance of grapefruit. The only thing I may change is using more gelatin as I didn't have enough to cover all the bottom of the pie and couldn't spread it easily with the grapefruit in it.

Salmon Cheese Ball

Love this recipe. My mom always made this for holiday parties and it always vanished fast. It's always the first thing I think of when I need to bring something for a potluck. We serve it with Triscuits and Chicken and Biscuit crackers.

Slow Cooker Pizza

Just ok for us. Not a lot of flavor. I thought it would be a hit with my son since he loves pizza but he hardly touched this. We ended up with lots of leftovers and they weren't very good the next day.

Turkey and Quinoa Meatloaf

I loved the texture of this meatloaf with the quinoa. It was much better than regular meatloaf to me and so much healthier. My 2 year old ate almost as much as I did.

Pecan Cheesecake

This is one of the best cheesecakes I've had. I couldn't find the pecan liquor but I had a white chocolate liquor so I substituted that and a little almond extract. It was delicious and beautiful.

Roasted Root Vegetables With Apple Juice

We used this as a side dish for Thanksgiving instead of the typical sweet potato casserole dish. It was a great way to use some different root vegetables. I used the leftovers in a shepherds pie and they were good there as well.

The Best Mashed Potatoes

Kale Chips

This was amazing! My 2 year old even gobbed them up. I think he ate almost as many as me. I used a tuscan blend olive oil and red wine vinegar. Don't forget the sea salt. That small pinch goes a long way. I WILL be making this again.

Ricotta Stuffed Zucchini

I found this recipe while looking for a new way to use zucchini. This was great! I served them alongside fish as a meal. I'll be making these again soon. Such a nice change from the sauteed zucchini rut I was in.

Lemon Curd Bars

Delicious! I found this recipe while looking for something to do with a jar of orange curd I got from my local farmers market. I used the orange curd instead of lemon curd and instead of adding the coconut and nuts to the topping I used graham cracker crumbs. My whole family loved it. My husband wants me to make these again.
