Ratatouille

This is a wonderful vegetarian dish. I followed the recipe as written except to reduce the cheese a bit and saute the onion after the eggplant. I served over couscous as a main dish meal. My only quibble is that all these veggies would never fit into a 1 1/2 qt casserole. I cooked it in an 11 x 7 dish. The recipe does not say whether to cover the dish, but I did based on other reviews, taking the cover off the last 15 mins. Will definitely make this again!

Orange Cream Fruit Salad

Wonderful! This was a huge hit with everyone who has tasted it. As others have noted, there is way more dressing than needed for the amount of fruit called for. I just add to cover fruit well and save the rest for another batch. It is quite sweet, so we have eaten it for both salad and dessert. Either way, it is great!

P.J.'s Fresh Corn Salad

Sorry but must agree with another reviewer who said this just did not come together well for her. I do really like all the ingredients, but I think it may be the cucumber that does not seem to fit here for me. Will stick with other corn salads from this site.

Fried Broccoli

I had a broccoli recipe very similar to this and lost it, so thanks so much for the post & confirming my recollections of the process. In my book this is the best broccoli ever with fresh. Will have to try the frozen variety now.

Cowboy Caviar

Great! Minor changes: Subbed red pepper for green, jarred garlic for salt, Rotel tomatoes for regular. Added dressing only to taste. It's important to let it marinate overnight for flavors to meld. After that it is wonderful!

Hobo Beef and Vegetable Soup

Very good soup. I took other reviewers' suggestions and subbed stew meat for ground, frozen veggies for canned, used Italian tomatoes, added seasonings (Italian herbs, Worcestershire, soy, Tony C). Also added sea salt since I used unsalted stock. After browning, just threw all in crock pot for 6-8 hours on low. Toward end I cooked 1/2 cup barley separately and added that. Best veggie-beef soup I have made so far.

Hot Artichoke and Spinach Dip II

The taste on this was wonderful. I did some of the things others recommended, like subbing sour cream for some of the mayo, adding more spinach, and mixing in the Italian mix cheese instead of putting on top. The only thing that keeps it from being 5-star, in my opinion, is that it comes out pretty crumbly and not really like a dip. I will work on making it creamier -- maybe using fresh mozzarella and adding more sour cream as others did -- but I will definitely make again. Everyone loved it as it was for the taste.

Bacon Ranch Pea Salad

This is a great old style comfort salad. It has always gone over well when I have taken it to potlucks and such. I use 2 cans of the sweet early peas, and usually spice it up with a bit of garlic powder and Cavender's or Tony Chachere's.

Italian Zucchini Saute

Oh my, this is now one of my favorite zucchini recipes. I did make a few minor changes suggested by others - much less oil and salt, used 3 med squash, fresh herbs, added garlic and Tony Chachere's. (I'm from La) Also cooked down for about 30 mins to allow tomatoes (no salt added kind) to lose their bite and develop some sweetness, so no sugar needed. This did cook the zucchini well beyond any crispness, so I might try adding them later next time. But the taste is wonderful. Will definitely make again.

Super Easy Salmon Cakes

This was certainly easy as the title says and seems to have potential, but for me it is three stars for several reasons. First, it is pretty bland. Will at least add some sort of more seasoning if I cook it again. Also, the proportions are way off in my estimation. I used a 14-oz can of salmon (which in my experience is the way salmon usually is packaged) and it was just about right for the amount of bread crumbs called for. It also made 8 medium-sized cakes as indicated. I can understand why others complained about too many crumbs if they used the 7-oz can called for. These cakes also absolutely fell apart as I was trying to coat them in crumbs and turn them over in cooking. May try two eggs if there is a next time. On the plus side, it was very easy and seems pretty healthful with good fish and little fat. Served it with a sour cream dill sauce which helped add flavor.

Great Chicken Salad

Wonderful! I use 1 lb chicken to ingredients listed, plus add a green onion and Tony C. To me it is best to chop the veggies a bit first, then add chicken so it remains slightly chunky. But it tastes wonderful either way.

Corn and Black Bean Salad

Everyone raved when I brought this to a potluck. Per others' suggestions, I used less balsamic and added some green onion, roasted red pepper, plus Dijon mustard and garlic powder. Look forward to making this again and again.

Kecia's Broccoli Salad

This was outstanding. Made a few changes as others suggested -- used 1/4 C each craisins & sunflower seeds and only 4 slices bacon, plus Splenda. The amount of broccoli is not very specific, but I used one large crown that yielded 4 C or more. Good advice to cut quite small. Result was better than any similar market salad I have had.

Black Bean and Couscous Salad

This is a great salad. Only change I made was to increase couscous to 1 1/2 cups, plus increase all else except beans in proportion per others' comments, as I needed a big batch. Will definitely make again.

Turkey Roll-Ups

As written this is quite good. The cream cheese/mayo spread is very tasty. A suggestion that ups this to five stars for me is to add some strips of roasted red pepper. Outstanding!

Chicken Breasts in Caper Cream Sauce

This is quick, easy and very tasty. I followed others' suggestions by pounding and flouring the chicken without lemon pepper, then sauteing with jarred garlic. Added some lemon juice at the end with extra cream (I used fat-free h&h, which was fine) but did not double seasonings. The sauce was not too thick but worked fine over linguine. Very good if you like capers and cream.

Cornbread II

If you grew up in the South eating grandma's cornbread on Sunday, you will not recognize this as cornbread. The proportions of cornmeal to flour are backwards at best, and I even increased the meal to 1 cup. Perhaps this is what passes for cornbread in some places, but not around here.

Slow Cooker Chicken Taco Soup

This is really good and easy, too. I used frozen corn and about 1.5 lbs of chicken. Also used dark beer and did not find any beer taste at all, as others have complained about. I think the type of beer could make a big difference. Can't wait for cold weather so I can make this again.
