Salmon Salad

I used some leftover grilled salmon and used the ingredients as a guideline. I used chives instead of green onions, because I had chives growing in my garden. The flavor combination works well together. I would say use less salt and add more if you want. Also let the salad blend it's flavors for a few hours to one day to get it's full flavor.

Oatmeal Peanut Butter Cookies

I do love these cookies. I used butter instead of margarine, that's all I ever use, other then that one change I made the cookies as written. Mine were very light and fluffy, easy for my 23 month old granddaughter to eat. I use a standing mixer and followed the recipe exactly.

Wow! Sweet and Sour Sauce

This is recipe I've needed for year, it's spot on! I used crushed pineapple since I had 1/2 20 oz. can left from another recipe, other then that I followed as is. Thanks Nana Nat!!

Hearty Hot or Cold Roasted Tomato Soup

This was great. Roasted the tomatoes with one whole head of garlic other then that I followed the recipe as is. I put cheesE tortellini in but you chould add anything if you wanted. WONDERFUL

Spinach Basil Pesto

This is a great recipe. The first time we, me and my 25 year old daughter, made this we made it according to the recipe. Since pine nuts a so expensive, this time I used roasted almonds with sea salt, I think it tastes even better make sure to cut back on the salt or not add any. I will use roasted almonds going forward.

Beer Lime Grilled Chicken

Granola Energy Bars

I did as Mel and put the chocolate chips in with the rest of the mix. This is a soft granola bar and seems to fall apart some. I had to use chunky peanut butter and wheat bran since that's what I had on hand. The flavor is good but seemed a bit on the salty side for me, next time I will not put in the salt. I will try this again.

Hamburger Buns

I thought this was a good point to start and you can change it as you like. I put half white flour and half whole wheat. I place of the sugar I used honey. I mixed it as directed using my KitchenAid standing mixer with the dough hook. The dough was sticky but a bit of flour on my bread board helped. I cut the dough in half and rolled each half into logs so that I could then cut those into dough pucks that I baked on parchment paper. They didn't rise as quickly as stated but that my have been due to the fact that I used whole wheat flour and honey. The taste and texture were great I will be making these again.

Raw Apple Cake

This was a great cake. I changed two things, I didn't use the cream cheese frosting, my famliy and I are not big on frosting and I used unsweetened applesauce in place of the oil. Using applesauce in most cake type recipes works well, it makes the cake moist and cuts the fat too and doesn't effect the taste, doesn't taste like you added applesauce. I will make this again.
