Thousand Island Dressing II

I cut the relish quite a bit...one or two tablespoons (can't remember). I also used Heinz chili sauce (like ketchup but with a little kick) in place of the ketchup. Yummy! I made this for a shrimp salad.

Ranch Dressing II

I followed another reviewer's advice and cut the sour cream in half and added 1/2 cup buttermilk (well, milk and lemon juice style), added some vinegar and doubled the garlic powder. Also, I had no chives so I doubled the onion powder. This was fantastic! Loved it so much, I'm going to get fat on ranch dressing! Why would anyone buy bottled dressing when they can make this scrumptious recipe so easily?

Turkey-Stuffed Peppers

Love this! Luckily I had the ingredients I needed on hand, substituting red bell peppers and parmesan cheese. Make sure you drain everything well. It could possibly use a little more kick, but maybe if I'd have used cheddar cheese it would have been fine. I've been telling everyone about this hit!

Breadsticks with Parmesan Butter

The best bread sticks I've ever eaten! I had to add a lot more flour. I also added some Italian seasoning to the dough and brushed the tops with olive oil after baking and then sprinkled grated parm.

Almond Wild Rice

Took this to my bible study group and it was a big hit. As someone suggested, I cooked a 1.5 c 1/2 & 1/2 brown and wild rice combo in the oven at 375 for an hour. I also substituted craisins for the golden raisins. It went great with the rotisserie chicken main course.

White Chocolate, Chocolate Cookies

These were so excellent! I used 1/2 baking soda and 1/2 baking powder, replaced the sugars with a combination of Sucanat, date, and maple sugars and replaced 3/4 C flour with WW pastry flour. I scooped these with a ball scoop and they ended up keeping their shape and seemed more like little brownies than cookies. They were a big hit!

Cajun Chicken Pasta

I thought this was pretty good. Definitely used more that 4 oz of pasta! My teenage son absolutely loved it. He would have rated it 5 stars. I made it exactly as stated, except adding additional pasta. I would add more cajun seasoning next time and possibly less cream. I don't think we needed quite so much.

Death by Chocolate Mousse

I used a 9.5" spring form pan, using 5 additional Oreos. I used milk chocolate chips. I took this to a potluck at work where it was a huge hit. It's even yummier with a cup of coffee. We didn't find it to be too dense. Possibly because of the milk chocolate? It was perfect! Can't wait for another occasion to make it.

Escarole and Beans

I liked this quite a bit. I forgot the parsley but didn't miss it. I doubled the garlic and added a little garlic powder to the beans as well. I used beans I cooked from dried, so instead of juice from the cans I used a little vegetable broth. My beans were not as cooked as canned beans are, that and with the broth I didn't get the creamy texture everyone described. I only had a little escarole so I used 1 part escarole, 2 parts curly endive. I used just a little salt and white pepper as well. It exceeded expectations! Very good and healthy!

I took others' advice as well as made substitutions based on what I had available; here are my changes: Added garlic powder to the meatballs, used dried minced onion instead of onion powder and baked them. Added a clove of garlic, upped the carrots to 1/2 cup, added 2 stalks of celery, used one cup of chicken stock and 6 cups vegetable stock, cut the orzo in half and cooked it separately, added a green onion, sauteed all veggies before adding broth. I think that's it. It was soo good! Love this soup!

Absolutely Fabulous Greek/House Dressing & Salad

I have used this dressing on a cucumber/tomato/red onion salad a couple times, once for a July 4th bbq and once for a family reunion...it got rave reviews both times. In fact, I can't stop eating the leftovers. my only change is to do as other have suggested and use equal parts oil and vinegar. Also, I've found that I need less dressing per serving of salad than what it calls for. So, 12 servings of salad needs about 6 servings of dressing. YUMMM!!
