Homemade Albondigas Soup

Super Yummy & easy to make. I added 1 can of El Pato (hot tomato sauce) because I love spicy food! Everyone liked it - even the picky 10 year old. Perfect on a winter day.

This was super easy & tasted really good! I did not have tahini so I just made it without & I did not miss it at all. Took less than 10 minutes to make & everyone loved it. Great quick after-school snack!

Chicken Piccata

My husband is always talking about his friends, wife's chicken piccata....and quite frankly I got tired of hearing how good it was....so I made this recipe for him without saying anything. he loved it... not only was it better than 'hers'... he stated that it was better than one of his favorite dishes at a restaurant. woo hoo! My son thought it was a little sour. :-)

Shoyu Chicken

Yummy! I made this chicken last night for the family. As someone else suggested, I put everything in a big pot & boiled it for an hour +. The boys loved it! So easy. Not too spicy ~ although I did not include the cayenne. :-)

Hot 'n' Spicy Buffalo Chicken Salad

Penne with Chicken and Asparagus

I made this recipe almost as-is & the whole family enjoyed it - including my 9 year old son (surprise!!) The only changes I made were: I used whole grain fusili pasta, did not have parmasan on hand. Added a dash of oregano & basil to the chicken broth mixture. Primo!

Chicken And Apple Curry

This was Super Easy & Super Yummy! I thought that it was going to be too sweet & apple flavored - but is wasn't. I had a great flavor. I chose to cook mine on the stove top by cubing the chicken & cooking it first - then adding the other ingredients. To my dismay, I only had about 1 tablespoon of curry powder left so I added a few spices to compensate: turmeric, ginger & chili powder. It was a nice dish for grey, gloomy winter weather - but not too heavy. Would go great with a salad in the warmer months. Yum-Yum!

Catherine's Spicy Chicken Soup

Wow! This soup was delicious - talk about 'Kicking it up a notch'! What a great break from the same 'ole soups. I did not have all ingredients on hand so I improvised a little; adding a big squeeze of Catsup in place of the Tomato soup and leaving out the whole tomatoes and adding only 2 Tbs. of Chili powder. Regardless, the flavor was fantastic and my 7 year old loved it too! This will definitely be added to my favorites!

Roast Sticky Chicken-Rotisserie Style

This recipe was fantastic! Flavorful & moist. I am not a fan of cooking or eating meat 'on-the-bone' and w/ this recipe, the meat fell right off! It was delicious - worth the wait w/ the long cooking timw. Perfect for Sunday dinner.

Bow Ties with Sausage, Tomatoes and Cream

This recipe was delicious & my seven year old thought so too! (minus red pepper flakes) Incredibly quick & easy for weeknight dinners...but I would defiantly consider serving to friends & family @ a weekend gathering.

Meat Filled Manicotti

I used 1 whole egg instead of 2 egg whites (easier) and ricotta instead of cottage cheese. SOOOO much easier to make than I had anticipated - I was pleasantly Surprised! Turned out Wonderfully! My 6 year old loved it along with the 'old man' :)

Broccoli Chicken Divan

I've been using a similar recipe passed down by my mother. It's a family favorite! Our recipe includes regular mayo in place of the milk, leftover fried chicken or crispy chicken strips, a splash of lemon juice & a dash of Curry powder in the sauce - no breadcrumbs.... Delish!
