Russian Tea Cakes I

Dough will be crumbly at first but will warm in your hands as you form the cookie into a ball. I used 1/2 cup finely diced walnuts, 1/2 cup pecan chips. Rolled in 10X sugar immed. after they came out of the oven to form a sugar glaze. Let cool. Rolled again in 10X. Let sit for an hour or two, then stored in tin. Buttery, nutty delicious cookie that looks good on a tray. Always a favorite.

Jamie's Cranberry Spinach Salad

Made this for Thanksgiving and it was a huge hit! Cheated a little and bought baby spinach leaves in a bag. I plated the salads in advance, adding only the almonds and cranberries. Just before serving, I dressed them. It makes for a great presentation . . . so colorful. Just a caution, don't cook the almonds too long or they'll taste bitter. I used the slivered almonds and had to make a second batch. Glad I did. Thanks for sharing, Jamie! This was a great way to add green amongst all of the starches.

Cherry Chocolate Cake

This recipe combines all of my favorite flavors so I had to try it . . . glad I did! It was incredibly moist and went great with coffee in the morning. I did not put icing on the cake, I used regular flour instead of cake flour and baked it for about 45 minutes. It's so easy to make from scratch, no need to use the Devil's Food Cake shortcut.

Pumpkin Spice Cake II

I took the advice of other reviewers and only used 1/2 c oil . . . perfect! Anymore would have made it too moist. For spices, I used 2 teaspoons of pumpkin pie spice and one teaspoon of cinnamon. I only baked for 35 minutes in a 9X13 pan. This is a great recipe for the fall. It's foolproof and doesn't take long to prepare. I will be making this one for years to come!

To Die For Blueberry Muffins

Now I know why this recipe is so popular! Delicious and easy to make. Agree with other reviews . . . only makes about 4 giant muffins but enough crumb topping for about 8. Be sure to cook the full time or they will be undercooked in the center. Next time I will cover with tin foil for the last few minutes.

Egg Fried Rice

Delicious ! I made this with Oriental-style, grilled chicken. This is a low fat recipe that is tasty and quite easy to make on a weeknight.
