Best Spanish Rice

So good and so easy! My whole family loved it! It does take longer than 20 minutes to cook, but it is worth the wait. A great base for any Mexican dinner or side dish.

Heather's Cilantro, Black Bean, and Corn Salsa

I took the advice of earlier reviewers and used fresh tomatoes (3), some chili powder and cumin (to taste), and extra lime juice (about 1/2 cup total). The salsa was simple to prepare and very delicious! It's also very festive looking- great to bring to a party.

Strawberry Pretzel Squares

I made this with Glutino gluten free pretzels and it was still delicious! Everyone loved it! Just make sure to leave yourself enough time for the jello to set... mine took awhile. Good to make the night before.

Strawberry and Feta Salad

I made this for Easter and everyone loved it- what a delicious recipe! I used goat cheese rather than feta, because I had it on hand, and it was still good. It's a nice, pretty salad to put out for a holiday, too.

Moo Goo Gai Pan II

Easy and delicious! I didn't even have a wok to use and it still turned out to be tasty :-) I made rice with the rest of the chicken broth and they were good together. The serving sizes were pretty small. I'll make extra next time.

Meat Lover's Pizza Casserole

I added 1.5 tsp of chopped garlic and 1 tsp of dried basil to this recipe, and thought it was really delicious! I covered my casserole dish while it was in the oven, which seemed to help it from drying out. If I make this again, I will use a little less pasta or more meat, I think it would be more tasty that way. Overall, a good, easy recipe!

Garlic Chicken

I love this recipe! I've made it twice now and everyone has loved it. I am gluten intolerant, so I used corn meal rather than bread crumbs, and I used chopped garlic instead of crushed. I also cut the chicken into chicken finger size to make them easier to bread and easier for my toddler to eat. So easy- and delicious! I'll definitely be making this one again!

Skin-on Savory Mashed Potatoes

Easy & really delicious! The potatoes took longer than 15 min to boil, but they were worth the wait :-) Also, I would recommend using an electric mixer on the potatoes to make the chunks of potato skins smaller. But they are easier than regular mashed and are really tasty!

Quick Chicken And Wine

This was a hit with the family-- it is really delicious, and really easy! As other reviewers have said, coating the chicken in flour before eggs helped a lot. I also put the chicken under the broiler for 1 or 2 minutes after simmering in the wine to crisp it up a bit. I also used the leftover wine sauce and poured it over the chicken and rice (which I made with chicken broth rather than water). Mmm mmm good!

Teriyaki Marinated Chicken

Winter Chicken Bake

I was excited to make this recipe after reading some rave reviews of it. It looks very festive and sounded delicious. I made it last night, and was very disappointed. I used fresh cranberries (maybe this is where I went wrong) and it made the whole thing extremely tart. The apples lost all of their flavor and everything just tasted like carrots. I would recommend trying this one out for yourself before making it for others--my husband did not appreciate being the guinea pig for this one! :)
