Tofu and Veggies in Peanut Sauce

This has become a staple in my household! It's a very versatile recipe, so this is a great way to use up those veggies -- I love throwing in carrots, water chestnuts, and anything else I've got on hand. Unfortunately, my husband doesn't like tofu nearly as much as I do, so I generally make it with chicken instead.

Take-Out Fake-Out Pollo Con Crema

Roasted Vegetables

This is my signature contribution to my family's holiday gatherings! Rich and delicious, it makes for great comfort food, too. I use a little less rosemary than the recipe calls for, though, based on feedback from the relatives.

Creamy Reuben Soup

I made this recipe as listed, minus caraway seeds, and it was incredible! My boyfriend gave it rave reviews and didn't tire of it even after a few nights of leftovers. We both agreed that it is going into our regular rotation. I shared some with a friend of mine who can't stand swiss cheese and even she raved over it, asking that I bring some to work for her. Five stars from this satisfied cook!

Cheddar Chicken Spirals

I used "Normandy blend" vegetables -- with zucchini, yellow squash, carrots, cauliflower, and broccoli -- and resisted the urge to tinker with it further, and I'm glad I did! This actually exceeded our expectations, and my picky husband couldn't get enough of it. This will definitely become a "comfort food" addition to our regular meal lineup. We didn't find the flavor of the mayo overwhelming at all, but if you absolutely cannot stand the stuff, try substituting sour cream as other reviewers have suggested. Also yummy!

Vermicelli Chicken Salad

I jazzed it up with some fresh lemon juice and served with lemon wedges for garnish. I thought it was pretty good. My husband promptly declared this one of his favorite foods of all time -- no small feat!

Puff Pastry Salmon Bundles

I was delighted by how easy this fancy-looking and photogenic dish was to make! I substituted crescent roll dough for puff pastry (shortening the bake time to 16 minutes) and only had canned asparagus on hand, but was very pleased with the results. My husband typically refuses salmon outright because of its strong flavor, but enjoyed his piece and didn't make a fuss about leftovers the following night.

Ham 'n' Cheese Potato Salad

I'm extremely picky about potato salad, to say the least, but my husband and I both LOVED this! I really like to add in a little sweetness by frying up the ham cubes with a little brown sugar. Mmm. For the health-conscious: You can easily trim off a lot of fat and calories by using light mayonnaise, light sour cream, low-fat jack cheese, and extra-lean ham. It still turns out wonderfully!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

I omitted the sauce and used this to make sweet sticky rice balls for my husband to take to work with him. He loved them! Next time I might roll them in a little coconut or sesame seeds.

Chocolate Chip Bread I

I left out the cinnamon and used chocolate caramel chips, and this turned into a sweet (but not overpowering) bread that my husband and his buddies loved. They couldn't stop asking for more! Light, fluffy, and moist. This is a keeper!

Stuffed Baby Yorkies

This was great! I used leftover pot roast and it worked wonderfully. It did take significantly longer than 12 minutes to brown, though, and I agree with the other reviewer about using a little less oil. Aside from that, four thumbs up -- my husband and I both enjoyed our meal.

Creole Tuna

This is good! I followed the advice of one reviewer and was sure to use UNDRAINED tomatoes and the consistency turned out great. I omitted the salt because of the canned ingredients and creole seasoning. The end result didn't have as much kick as I would have liked, so I added another teaspoon of Creole seasoning and a few dashes of hot sauce. Yum!

Slow-Cooked Steak Fajitas

These turned out even better than I expected! I added some corn and lime juice and it really added to the dish. Next time I make it, I'll use a little more cornstarch because it came out on the watery side. The leftovers make a great chili starter, too!

Victoria's Cucumber Salad

This is good! My father makes a similar dish that uses sour cream instead of mayo, and he adds plenty of thinly-sliced onions to it as well. For this particular dish, I really enjoy the addition of halved grape or cherry tomatoes.

Brunch Potato Casserole

This was pretty good the first day and delicious on the second. I did use low-fat mayo, 2% Velveeta, and turkey bacon; in the future, I think I'll use real bacon because the turkey bacon took on an unpleasant texture. My husband loved the combination of his favorite foods!
