Antipasto Pasta Salad

So good with or without meat. I just added extra parmesan and used mozzarella this second time. Everybody loves it. I like it and I don't like most balsamic vinegar and or italian pasta salads.

Chicken Almendrado

Delicious and tender! But I felt it needs something to go with it other than sliced almonds. I'm not sure what could be added that would compliment the flavors, and add another texture to the dish. Suggestions?

Stuffed Green Pepper

Was good! But took longer to cook than recipe called for, don't know if it was because i had rather large green peppers, but everyone loved it! I did tweak it a bit though and used a quinoa recipe from this website that I had left overs from instead of rice, and mixed a bit of shredded cheddar in before I mixed the meat in and stuffed the peppers.

'Calabacitas Guisada' (Stewed Mexican Zucchini)

SO delicious! I love garlic so I added more than called for, and added Frank's Red Hot sauce to taste to give it a kick. The second time I made it, I used one whole red chile pepper, seeded and chopped in with the onions and garlic.
