Seared Ahi Tuna Steaks
Great recipe. Super easy. The only change I made was to use less salt. I sprinkled coarsely ground sea salt on the filets but only used about 1/4 tsp in total. I couldn't get the peppercorns to pop, either, as some other reviewers mentioned, so I ended up crushing them with the flat side of a meat pounder while still in the skillet, before putting in the ahi tuna filets. It worked perfectly, coating the tuna in crushed peppercorns as it seared. I did cut back slightly on the time. I cooked it for only 60 seconds on each side and it was perfectly done. 90 seconds, as the recipe specifies, would have resulted in overcooked tuna. Next time I'm going to pre-crush the peppercorns.

All Day Apple Butter
Fantastic recipe. I cooked it for 11 hours. First three hours on high, then turned down to low. I added an extra teaspoon of cinnamon. Then blended with an immersion blender to make it smooth. Delicious.

Seattle Fire Station 25 Meatloaf
This was a decent meatloaf, but nothing I'd make again. I followed the recipe almost exactly, with the exception of cutting the servings to 8 and not using the meatloaf seasoning packet but, instead, using onion powder, garlic salt, garlic powder, salt, pepper, paprika, celery salt and a dash of cayenne red pepper. Which were the ingredients listed on the meatloaf seasoning packet I saw at the store. I used about 1 tsp of each for the half sized recipe I used. I also left out the pistachios due to a nut allergy in the family. I thought the pepper jack cheese was an awesome addition, and I enjoyed the black olives, but the spinach seemed odd to me. Again, the flavor was fine, just nothing exciting. I've had better meatloaf.
