Grandma Johnson's Scones

these are wonderful...i have made these twice now; the first time was a bit fraught, and i had to add some milk to get the dough to come together---i made the first batch with regular sugar, and tonight i've made the second batch with Splenda (again needing a little milk) and they are brilliant! they are light, sweet, delightful, and rise beautifully...only wish i could find some clotted Devonshire cream to have with them (Marscarpone cheese is a close but inferior substitute)---thank you!!! My husband, who is from England, said his aunt, a lifelong member of the Women's Institute would be proud to serve them :) High praise indeed!!!

Pina Colada Muffins

These were delicious! I substituted 1/4 cup of applesauce for the butter and doubled the rum flavoring. Fantastic! Next time I might substitute Splenda for the sugar and make them really healthy.

Chow Mein with Chicken and Vegetables

I just made this for dinner tonight and my husband called it "The best thing you've cooked in a long time." He polished off two bowls! It was a little bland, but we added more soy sauce and hot sauce at the table. I also added a generous amount of fresh grated ginger to the chicken / soy / cornstarch mixture. Will definitely be making this again! Thanks!!

Apple Crisp II

came out great, but i wouldn't follow another reviewer's advice to use a food processor to slice the apples again, or at least not if you have a cheap food processor like mine! the apples got sliced too thin, and i ended up with textured apple sauce with fantastic crumble topping...still, it is delicious and i will definitely make it again!

Cod Curry

fantastic recipe! I do a lot of Indian cooking, so had all the ingredients (except the fish) on hand; the recipe whips up in a flash then simmers away, blending, until you're ready to eat---perfect! My husband loved this; i served it with warm naan bread, steamed spinach, and store-bought vegetable samosas with tamarind chutney.

Slow Cooker Turkey Breast

this was glorious in its simplicity---so easy and so delicious; i added about 3/4 cup of chicken broth at the bottom and some sliced onion, strained it after the turkey was done and it made magnificent gravy. Thank you for this recipe!

Yummy Bok Choy Salad

"This is definitely the best salad you've ever made!"---my carnivore husband. Just made this tonight and it was a HUGE hit; nothing left for me to take to work tomorrow! I made a few changes only because I didn't have enough bok choy; I added a seeded, chopped cucumber, and used thin slices of 1/4 of a red onion (didn't have green onions, either). Halved the oil, but everything else the same. Will be making this on a regular basis since it gets greens into my DH! Thanks!!!

Italian Chicken and Chickpeas

this is absolutely delicious! ingredients i always have on hand, super-easy to make, healthy, and inexpensive---a brilliant combination! i stirred in some fresh spinach with the chickpeas to make it "al Florentine" Thanks for a great recipe!

Cranberry Almond Biscotti

i have tried several biscotti recipes from this site with varying degrees of success (from dismal failure to kind of edible) but these are the business! they are easy to make, delicious to eat, and turn out like a proper biscotti! i substituted 3/4 cup of Splenda for sugar, and added 5 drops of Almond Oil in addition to the almond extract---they are terrific! thank you for a wonderful recipe!!

Slow-Cooker Barbecue Ribs

great, great, great, great, great! this was my first time cooking ribs and they came out, well, great! i followed other suggestions and used 2 cups BBQ sauce, 1 cup chili sauce, a whole lot of tabasco, and added a tsp of black pepper, and a good shot of Frank's Red Hot sauce for a little more tang---they were a smash hit; the meat fell off the bone, and was terrific for sandwiches for the rest of the week (altho the sauce is hard to get out of my husband's work shirts!!)---thank you so much!

This recipe is delicious! I had my doubts with the way it went together (I followed the original recipe)but it turned out great. Yes, the sponge is sticky, and after kneading the dough is very elastic and gloopy. But given time, it works! I mixed the sponge in with the other ingredients by hand (don't have a stand mixer) then threw it all into the bread machine on Dough cycle. When I took it out, I divided it into 16 mini loaf sized pans and baked them for 20 min. They came out golden and perfect. They have a lovely taste, good crumb, and a nice crust. My British husband loves them as they taste like the bread in England and not the horrible, felt-textured bread here in the States. Thanks for the great recipe!

Ham and Beans and More

good, good, great, wonderful, delicious!!! we loved this---i work nights, so i whipped it up and into the slow cooker before i went to bed in the morning, woke up, did errands, and had a fantastic dinner waiting for me and the hubby! I served this with crusty Italian bread and a simple salad---this will be a frequent meal at our house; thank you!!

Cheater Pot Pie

this was really good, altho i changed it a bit: i had skinless/boneless chicken thighs to use up, so cut them into chunks, used cream of celery (low fat) and cream of chicken soups, added a bit of garlic powder, poultry seasoning, and chicken soup base, then topped it with crescent rolls (from a tube) laid flat (i had them to use up)---it was fantastic! my husband went up for thirds: a sure sign of a hit!

Sausage Stuffed Mushrooms II

I made these for a Christmas Eve dinner, and they went over HUGE---people loved them and couldn't believe they were so simple to make...I used Bob Evans breakfast sausage (1 lb) but next time I think I'll try the spicier sausage or add some salt and pepper...anyway, these were great!

McCormick® Gingerbread Men Cookies

these turned out so great! i doubled the spices as we like our gingerbread spicy, and they're delicious. These were the first roll-out / cut-out cookies i've ever made, and they turned out fabulous---i figured out to roll the dough when it is still cool between two sheets of parchment paper: easy peasy! Grilled Chicken Thighs Tandoori

fantastic!!! i used boneless/skinless chicken thighs and left them to marinate for 2 days (kind of forgot about them) and then did them on the grill---wonderful! my husband raved about them...i think next time i'll add a bit of citrus (lime or lemon), and more garlic and ginger as well as some heat from somewhere...these are going to be a staple at our house!!! thank you!

Old Fashioned Mac and Cheese

This is so good. Mac and cheese is one of my all-time favourites anyway, and this version is as good as it gets. I never have Swiss cheese, so I just use grated Mozzarella instead, and it tastes great. First time I made this I baked it according to the recipe, but it came out way too dry for me. The second time I didn't bake it at all, and I loved it, but the hubby missed the brown baked bits. So next time hopefully we can find the happy medium. Thanks for a great recipe!
