Quick Chicken Parmesan

This is my kind of meal: things I have in the freezer or cupboard, all cooks in 1/2 hour. It tastes great, fills the tummy, not too hard on the wallet: perfect!

Sweet, Sticky and Spicy Chicken

Tasty and super easy! I used chicken thighs (what I had on hand) and substituted chili-garlic sauce for the Asian hot sauce (I thought I had a bottle of Sriracha, but nope). Great combination of flavors and it comes together really quickly. I served it with homemade fried rice and stir-fried baby bok choy. Thank you! ADDED COMMENT: I've made this 4 or 5 times now and this is my favorite method---I always use chicken thighs, and double the sauce. I also add about a teaspoon Chinese Five Spice powder, and let the chicken and sauce bubble away for about 20 minutes by which time it's a lovely, sticky sauce as promised! It was a five-star recipe originally, and just suits our family using this little variation---Thank you again!

Cucumber Raita

wow this was good: really, really good! i have been craving Indian food since we moved from England to the US, and this was reminiscent of the raita we used to get at our local Indian take-out restaurant in England! i used fatfree yogurt and added some fat free sour cream for body, and used Splenda instead of sugar: this will become a staple "must have in the fridge" at our house! thank you!!!!

Asian Pork Tenderloin

oh my oh my, this is good!!! made only a few minor changes (used Splenda Brown instead of brown sugar, and onion powder when i discovered i'd forgotten to buy green onions), left it in its marinade for 4 days, and grilled it---it was brilliant! both my husband and i loved it, and it will be appearing on our dinner table again! thank you!!!

Cranberry Nut Bread I

this is lovely bread---i added some vanilla and almond extract, and used almonds in place of walnuts. I sprinkled some raw sugar on top and it came out wonderfully. I didn't bother to chop the cranberries---like little bursts of flavor; terrific! thanks for the recipe!! EDIT: to add that i made mine using granulated Splenda and Egg Beaters---worked great!

Cranberry Almond Biscotti

i have tried several biscotti recipes from this site with varying degrees of success (from dismal failure to kind of edible) but these are the business! they are easy to make, delicious to eat, and turn out like a proper biscotti! i substituted 3/4 cup of Splenda for sugar, and added 5 drops of Almond Oil in addition to the almond extract---they are terrific! thank you for a wonderful recipe!!

Tex-Mex Chicken and Rice Bake

this came out delicious! Made it just as the recipe stated except put a mixture of cheddar and mozzarella cheese on top (and a lot of it, too; we're cheese freaks at our house). It was filling, very tasty, and easy to make: a great combination! Thank you!

Slow Cooker Split Pea Soup with Bacon and Hash Browns

This was FANTASTIC. It was my first time making and eating split pea soup, and it was a big hit! We were in a budget crunch, so I used white potatoes diced small instead of buying hash browns, and I think I would do that again---it added a nice heartiness to the soup so it felt more like a meal. I even had it over a baked potato one day for lunch and that was great, too; the soup definitely improves over time! This was flavorful, hearty, filling, delicious, easy, and cheap---a terrific recipe all around! Thank you!!

Pasta e Fagioli ala Weeble

This is a wonderful soup, and comes together quickly and easily. I used the Roman beans (found them in the Goya section) as per the recipe, and made everything else as written. The only thing I changed was to stir some fresh spinach into the finished soup until it wilted. Fantastic---served with garlic bread this is a perfect meal for a cold / damp weeknight! Thanks!!

Old Fashioned Mac and Cheese

This is so good. Mac and cheese is one of my all-time favourites anyway, and this version is as good as it gets. I never have Swiss cheese, so I just use grated Mozzarella instead, and it tastes great. First time I made this I baked it according to the recipe, but it came out way too dry for me. The second time I didn't bake it at all, and I loved it, but the hubby missed the brown baked bits. So next time hopefully we can find the happy medium. Thanks for a great recipe!

Cucumber, Tomato and Red Onion Salad with Mint

This was a lovely, light salad; I served it with an Indian dish of fish in a yogurt sauce and a mushroom rice. I used grape tomatoes and left out the salt. This was the perfect accompaniment to an Indian-inspired meal. Thanks!

Grilled Mahi Mahi

i had never eaten mahi mahi before, and had no idea how to cook it, so AllRecipes.com to the rescue----i whipped this up after coming home from work and it was fantastic! great flavors, easy to do, stuff you have on hand (or at least i do!)...can't wait to make this again! thank you!!!

These were delicious! I substituted 1/4 cup of applesauce for the butter and doubled the rum flavoring. Fantastic! Next time I might substitute Splenda for the sugar and make them really healthy.

Pizza Crust for the Bread Machine II

This worked out very well for me. I substituted olive oil for vegetable and used a teaspoon of white wine instead of lemon juice (too lazy). After topping it with sauce, cheese, and pepperoni I baked it on a baking tray in a 500F oven for 12 minutes: perfect. Next time I will roll it out thinner as it gets quite a last minute rise in the oven and my husband prefers thinner crust. Thanks!

Dumplings

These are absolutely fantastic: my go-to dumpling recipe. I confess I have attitude about recipes that advise using canned biscuits for dumplings. These take no more time to make and the taste is so superior---I can't imagine why anyone would want those nasty, preservative-laden lumps in their stew! But I digress: these dumplings are the business and I never change a thing. Thank you for a wonderful recipe!

Grilled Chicken Thighs Tandoori

fantastic!!! i used boneless/skinless chicken thighs and left them to marinate for 2 days (kind of forgot about them) and then did them on the grill---wonderful! my husband raved about them...i think next time i'll add a bit of citrus (lime or lemon), and more garlic and ginger as well as some heat from somewhere...these are going to be a staple at our house!!! thank you!
