Sweet Hot Mustard Chicken Thighs

I used chicken drumsticks for this and marinated them for about 11 hours. I didn't have any chipotle powder so subbed paprika instead. We liked this recipe very much. Slightly too sweet; I might cut back on the brown sugar a little next time but we will definitely have these again!

Healthier Restaurant-Style Buffalo Chicken Wings

This was good for a home recipe, and bonus: no frying! I used chicken legs and baked them for an hour in a 400F oven. Next time I might cook them a little longer to get them a little crispier. The flavor was good, and I liked the spices in the flour dusting (I mixed them all together in a gallon-sized Ziploc bag and shook the chicken in the bag). The sauce was good but I will definitely decrease the butter next time; even this little amount left a sheen of oil on top of the sauce. A terrific alternative to ordering pizza and wings! Thanks!

Pizza Crust for the Bread Machine II

This worked out very well for me. I substituted olive oil for vegetable and used a teaspoon of white wine instead of lemon juice (too lazy). After topping it with sauce, cheese, and pepperoni I baked it on a baking tray in a 500F oven for 12 minutes: perfect. Next time I will roll it out thinner as it gets quite a last minute rise in the oven and my husband prefers thinner crust. Thanks!

Ginger Veggie Stir-Fry

This was yummy---I've never made a stir-fry this way before but it was very good, and truth be told, more successful than my previous attempts! I cleaned out the fridge for this one: broccoli, cauliflower, carrots, snow peas, green pepper, and added two microwaved Quorn Naked Chik'n fillets. Used garlic and ginger pastes from the local Indian grocery and low sodium soy sauce. I'm doing Weight Watchers, and this added up to 4 points plus extra points for some rice. Thanks!!!

Pina Colada Muffins

These were delicious! I substituted 1/4 cup of applesauce for the butter and doubled the rum flavoring. Fantastic! Next time I might substitute Splenda for the sugar and make them really healthy.

Cinnamon Coffee Cake II

Hoo boy, is this sweet! I used sugar-free pudding (one vanilla and one cheesecake) and Splenda Brown, and it was still tooth-achingly sweet. Next time I will leave out the pudding and just make the cake or something...that being said, my husband is eating a big square of this with ice cream and raving about how good it is, so, to each his own!

This recipe is delicious! I had my doubts with the way it went together (I followed the original recipe)but it turned out great. Yes, the sponge is sticky, and after kneading the dough is very elastic and gloopy. But given time, it works! I mixed the sponge in with the other ingredients by hand (don't have a stand mixer) then threw it all into the bread machine on Dough cycle. When I took it out, I divided it into 16 mini loaf sized pans and baked them for 20 min. They came out golden and perfect. They have a lovely taste, good crumb, and a nice crust. My British husband loves them as they taste like the bread in England and not the horrible, felt-textured bread here in the States. Thanks for the great recipe!

Slow Cooker Beef Stew I

Does just what it says it will: it is beef stew made in the slow cooker. Tastes good, filling, delicious. I use chuck roast (cheaper than stew beef) and it came out very tender and flavored the whole stew. Needs something to elevate it that one extra star, but it is a very nice stew, and I will make it again.

Mushroom Chicken in Sour Cream Sauce

This isn't the prettiest dinner I've ever served, but it does taste great. Next time I'll wait to add the sour cream so the sauce doesn't look so split. I didn't have any lemon-pepper so I added the juice of a lemon just before serving. Very easy and tastes great: will definitely make again!

This was good, although we found it a bit bland. I used boneless loin chops (what I had in the freezer). Served with crushed potatoes and buttered peas; it was a nice, simple dinner.

Italian Chicken Skillet

I made this for dinner tonight and enjoyed it. As written, I don't imagine it would have much flavor, as even with my additions, it was pretty mild on the palate. I doubled the garlic, added some red pepper flakes, some Italian seasoning, an onion chopped and sauteed, and a green pepper. Towards the end I added a chopped up zucchini. I would make it again, even though my husband was a little lukewarm about it.

Chow Mein with Chicken and Vegetables

I just made this for dinner tonight and my husband called it "The best thing you've cooked in a long time." He polished off two bowls! It was a little bland, but we added more soy sauce and hot sauce at the table. I also added a generous amount of fresh grated ginger to the chicken / soy / cornstarch mixture. Will definitely be making this again! Thanks!!

Cucumber, Tomato and Red Onion Salad with Mint

This was a lovely, light salad; I served it with an Indian dish of fish in a yogurt sauce and a mushroom rice. I used grape tomatoes and left out the salt. This was the perfect accompaniment to an Indian-inspired meal. Thanks!

Fish Fillets Italiano

We really enjoyed this! I used frozen cod fillets, and since we are a "dry" household, I substituted chicken stock with a splash of cider vinegar for the white wine; it gave the dish just a slight edge which was very nice. I doubled the garlic and used dried parsley flakes. We'll definitely be having this again! Thanks!!!

Yummy Bok Choy Salad

"This is definitely the best salad you've ever made!"---my carnivore husband. Just made this tonight and it was a HUGE hit; nothing left for me to take to work tomorrow! I made a few changes only because I didn't have enough bok choy; I added a seeded, chopped cucumber, and used thin slices of 1/4 of a red onion (didn't have green onions, either). Halved the oil, but everything else the same. Will be making this on a regular basis since it gets greens into my DH! Thanks!!!

Skillet Pork Chops Florentine

Just made this tonight and it was very nice; it didn't blow our socks off, but it was simple, quick, and inexpensive. I seasoned the pork chops with salt, pepper, and garlic powder before browning, and added some home-grown fresh basil and oregano with the mozzarella. It probably needs some extra garlic, maybe a few dried red pepper flakes to just bump it up a level. Hubby loved it, so I'll make it again! Thanks!

Spicy Basil Chicken

This tasted pretty good after a few tweaks: added some fish sauce and lime juice. I also made the recipe in a slightly different order than the printed recipe. I stir-fried the chicken in chili oil until slightly browned, then added the mushrooms and onions. When the onions were tender, I added the garlic, garlic salt, sugar, and pepper and the oyster sauce. Threw in a good splash of fish sauce, and the juice of a lime: sweet, salty, spicy, sour. Turned out great and the hubby loved it. Served with Thai cucumber salad from this website. Thanks!

This was incredibly good---I followed the recipe to the letter, and would only change one thing next time: I will reduce the sugar to a scant teaspoon. Otherwise, no changes---we loved this!!!! Thank you!
