The Best Vegetarian Chili in the World

Reviewed: Apr. 21, 2013
We have made this several times and loved it. This is a great meal to take to a friend. If you like it really spicy, make it as is. We have children who don't like it too spicy, so we cut the chili powder down to just less than 1/8 cup, omitted the jalapenos, reduced black pepper to just less than 1 T, and got "mild" canned green chiles. For meat eaters, you will also LOVE this. Just brown a package (usually 20 oz) of ground turkey and then proceed with the rest of the recipe. This chili is pretty thick, so you can add veggie broth or chicken broth if you want to thin it it a bit (we drain and rinse our beans to avoid added sodium, so I guess if you don't do that it's not as thick).

Real Hummus

Reviewed: Apr. 18, 2012
This is a great recipe! I add a good 5-10 shakes of cumin, and then more to taste when eating. I also use all the garbanzo beans. Skip the black pepper and olive oil.

Easy Alfredo Sauce I

Reviewed: Apr. 18, 2012
So easy, and so yummy. We use fresh parmesan, grated in our Oskar. Mix everything together constantly until melted. Don't get heat too high or it will start to burn. I usually do it on medium heat for a little bit, stirring, and then turn it down. Serve over pasta mixed with chicken and steamed broccoli.

Tater Tot Bake

Reviewed: Apr. 18, 2012
Only changes made were to mix ground beef/onion mixture and soup/milk mixture and then spread it on the bottom of the pan. Then I sprinkled a little cheese, then did the layer of tater tots, and sprinkled a little more cheese. Tater tots came out crispy and yummy. I always make this in a 9x13 casserole rather than the square 2 qt casserole. It still comes out great. Kids love it too. Next time I will try adding a layer of green beans on the bottom as others have suggested, just to get that veggie in!

Whole Wheat Blueberry Muffins

Reviewed: Apr. 18, 2012
I didn't have any veg. oil or white sugar in the house so I made some changes. I used hard white wheat flour ground at home, a bit less than 3/4 of cup of sucanat in place of white sugar, buttermilk rather than milk, coconut oil rather than veg. oil, and frozen bluberries rather than fresh. I was honestly a little worried how it would turn out but they were great! Really delicious and the kids liked them too. I think you could cut back on the oil, especially since you're already using applesauce. Will definitely make again!

Melt - In - Your - Mouth Shortbread

Reviewed: Dec. 21, 2001
Excellent- my husband immediately begged me to make another batch. We dipped half of each cookie in Baker's German chocolate to dress them up a bit. They cooked in about 10 minutes.

Garlic Ginger Chops

Reviewed: Jan. 8, 2001
These chops were very good on the grill. I used 3/4 cup kikkoman lite soy sauce and marinated them for about 8 hours. The soy sauce does have a strong flavor and I think regular, full sodium soy sauce would have been too overwhelming. If you don't like soy sauce, you probably won't like this recipe. We, however, will be making them again!

Homestyle Turkey, the Michigander Way

Reviewed: Jan. 5, 2001
This was a very easy recipe to follow and made a great gravy when the drippings were thickened with flour and water. However, my turkey was exactly 12 pounds and was done in 2 hrs 15 minutes, so 4-5 hrs is way too long. I will definitely be doing turkey this way from now on.

Easy Lasagna I

Reviewed: Dec. 17, 2000
This lasagna was very tasty and easy to make. The only thing that went wrong was that the top layer of noodles was a little "crunchy" around the edges. We liked it because it was not very saucy and didn't fall apart as soon you took a piece from the pan. Will definitely make again. We only wish we had made garlic bread to go with it!
