Big Soft Ginger Cookies

This is our families all time favorite cookie and I can not possible say enough about this recipe. For those of you having a hard time with the consistency after mixing the ingredients try putting it in the refrigerator to help firm it up a bit. As far as rolling it out like someone suggested I wouldn't waste your time. I use one of the small ice cream scoops and drop them on to a silicone pad and they all come out the perfect size and shape. Seriously I don't know how you can improve on this recipe it truly is the best I have tried. I can not thank the person who shared this recipe enough!!! ~D

Mexican Rice Mix

Over all this recipe was surprisingly good. I was in a hurry and had to make a few changes. The first being I did not have the time to cut up onions and peppers so they were left out and instead I added one teaspoon of onion powder. I took the advice of the other reviewer and added a can of diced tomatoes. Instead of the boullion granules I replaced it with half the water called for and half chicken broth. By doing this it ends up less salty and you could add the original salt required before or after cooking. Another thing I would do the next time I make this recipe would be to use the required liquid on the package of the rice. After cooking it still came out a little too moist and mushy.I doubled this recipe for a family of five and there was only a small amount left over. Even the pickiest of eaters went to town on this rice.

Easy Lemon-Blueberry Jam

This was a delicious jam. I followed all directions with the exception of crushing the berries. Instead I followed one of the other reviewers advice to put the berries in the food processor for a bit of a smoother texture. It came out perfect and the texture and consistency was just right. I don't believe that you need the certo like others have suggested. I will be adding this to our families favorites and be making it again next year.

Maple and Ginger Baked Beans

After reading the reviews I was a little leary to try this recipe. I will have to say that I am very glad I did. There were a few subtle things that I changed only because of previous experience with cooking beans. The first was I added an extra cup of water so that the beans were nearly covered with the liquid mixture. I also added 1/4 cup more of brown sugar to help off set the extra water. I used the syrup I had on hand and it did not come out too sweet. I cooked the beans on high in the slow cooker for 5 1/2 hrs. and the beans soaked up most of the liquid so that it was not watery like previously stated. This recipe was a big hit with the family and we will be enjoying this for years to come.
