Snappy Green Beans
My mom made these regularly when we were growing up and they were one of the few ways I would eat veggies as a kid. I still love them today. My suggestions for tweaks would be to use tarragon vinegar instead of distilled white and frozen french cut green beans instead of canned. Then it would be perfect like hers :) I'm planning to make a healthier version of this tonight using turkey bacon & EVOO to saute the onions, and my suggestions for tarragon vinegar and frozen french cut beans. Overall though, this is one of my favorite veggie side dishes.

Easy Broccoli Quiche
I was looking for a way to use up some broccoli, heavy whipping cream and a pie shell left over from Thanksgiving. I thought this would be an adequate way to use them, but it turned out to be one of the best quiches I've ever had. The only change I made was to use heavy whipping cream instead of milk. This will be a new Meatless Monday staple in our household.

Ramen Coleslaw
I've made this twice now, once as written and once with some modifications. The first time I made a single batch and my husband and I thought there was too much dressing and that the dressing was too sweet. Thus the 4-star rating for the recipe. The second time I made this, I made a double batch to serve with burgers at a BBQ and made some modifications based on other reviewers' comments and it turned out great with several requests for the recipe. My tweaks (for a double batch) were to use 2 16oz bags of coleslaw mix; used half rice wine vinegar and half white wine vinegar; reduced the sugar by 25%; used veg. oil for half the oil, the other half was equal parts sesame oil and hot asian chili oil; waited until shortly before serving to add the dressing. With those tweaks, the double batch was fantastic and had the perfect amount of dressing!
