Cowboy Casserole

I made this on a camping trip last weekend. Everyone in our group of 10 LOVED it! They all (even the sister & mother- in-law) ranted and raved about it! We made it in our cast iron dutch oven in the fire. Great Flavor. I subbed Cheddar black pepper rolls that we made into bread bowls instead of the biscuits. Very handy & Fast! I doubled the batch and used honey bacon. Next time I will use a thicker saltier bacon & spicier BBQ sauce to enhance the flavor. Definate keeper!

Jalapeno Popper Spread

I made this recipe with miracle whip instead of mayo. Do not make the same mistake as I did. I think this recipe probably tastes really good if made exactly to the recipe, however it is terribly fatty. I read the reviews not to make any substitution... so I went to the store and bought mayo. Long story short when I was reading the label and seeing the 100 calories per tablespoon I freaked and subbed the miracle whip last minute. I will definately try to make this recipe again. It just sounds so good! Exactly like something all my friends would like... but I might try the half mayo and half sour cream option some reviewers have said. I simply cannot justify making this full fat.

Scalloped Potatoes and Onions

My husband and I both loved this recipe. I made it as stated plus I added approx. 1 cup leftover cooked ham. It barely fit into my 2.5 quart baking dish. I will use this recipe every time. No changes are neccessary. When we heated up the left overs my husband added some cream style horseradish to his. It added a fabulous zing. I will try adding 3 tablespoons horseradish to the whole batch next time. I also thought the cooking time could be reduced to 1:45, but maybe that is just because I sliced my potatoes quite thin. Either way this dish is absolutely great! You won't regret making it!

Cottage Cheese Potatoes

I made this for my in-laws for our Christmas dinner. Everyone really liked it. I doubled the recipe and made these adjustments: 5lb bag of red skin potatoes ( leaving the skins on) 1 Container chive cottage cheese 16 oz light sour cream 10 green onions 16 oz shredded cheddar cheese 1/4 cup real bacon pieces It turned out with a great consistancy, but bairly fit in my 9 x 13" cake pan. The left overs are especially good with ranch powder mixed in. I would rate it 5 stars next time if I added 2-3 tablespoons ranch powder. It really adds a lot! I will be making this again!

Bloody Mary Mix

I didn't really like this mix very much. I much prefer Clamato for Bloody Marys. My mother taught me never to waste so... To use it up I used this as a base for chili and it was REALLY TASTEY!

Buttery Soft Pretzels

This is the first recipe I have ever made that used yeast. I was kind of scared, but it turned out fabulous. For ease I often just roll them straight and cut them into bite size pieces after baking. These are best fresh. I made some to take a day later and they were not very good. I have played around with the flour, and find it is best to use slightly less than the recipe calls for and adding as needed. Enjoy!

Seminary Muffins

These muffins are terrific! They are very moist and tender. I made a few alterations. I ommited the nuts, and used mini chocolate chips instead. I made mini muffins, which took about 13 minutes to bake at 350. The mini chocolate chips make every bite chocolatey..which is awesome! I also used 1/2 whole wheat flour and splenda brown sugar blend. I will definately make these again! Thanks for a wonderful recipe!

Strawberry Oat Muffins

My husband and I really liked this recipe. I made it exactly as stated, and it came out fine. Next time I will probably try substituting 1/2 whole wheat flour and using some sugar substitute. I think some cinnamon would be a good addition as well. The recipe made 30 mini muffins, which I baked for about 13 minutes. You could use this recipe with pretty much whatever fruit or nuts you have on hand or prefer, and it will come out great!

True Wisconsin Bloody Mary

I just made this recipe last night, and it was the BEST! I made it exactly the same except I used zesty pickle juice and pickles instead. Mostly because I was out of olives. Will definately try olive juice though. Maybe it is a Wisconsin thing, but I always love Clamato the best. :o) If you like a very thick V8 style bloody mary, this is probably not for you though. I added slightly less hot sauce the second time, because I found it to be a bit spicey for my taste. If you do not like them very spicey add the hot sauce to taste. We are having bloody marys this weekend, so my husband wanted me to make pitchers of this recipe for everyone! I will use this recipe over and over! Enjoy!

Buffalo Chicken Dip

I just made this recipe last night. Everyone loved it!! I made a few changes as suggested by some reviewers. I used Boneless skinless chicken which I grilled. Light Cream Cheese & Ranch. I layered it in an 8x8 pan. Cream Cheese/Ranch Mixture. Chicken and Frank's Redhot. Then 1.5 cups of colby jack cheese on top. Baked 350 for 20 minutes. Absolutely perfect. I dabbed the top with papertowels to help reduce the grease. Worked Great! I served it with tostidos and celery. Celery was a defenite hit! Surprisingly! Not too spicey for anyone. Cannot wait to make it again!

Spinach Cheese Manicotti

We liked this recipe. My husband had never tried manicotti, so he was pretty skeptical. It turned out he really liked it! I liked it because of the ease! It is sooo much more quick and easy to stuff hard shells! I also used the ziplock baggie trick to fill them, which worked fantastic! I cut the recipe in half, and added 1/3 cup of mushrooms and green peppers. I sauteed the onions, mushrooms and with minced garlic for about 5 minutes. I also added Mrs. dash tomato, basil and garlic seasoning. . The next day put alfredo sauce on the left overs. Simply Delicious!
