Pan-Seared Tilapia

This was very good and very easy - a nice alternative to broiled tilapia drizzled in (fill in the blank - we eat a LOT of tilapia). The only reason I did not give it 5 stars is that it was a little "delicately seasoned" for my tastes. I amped it up a bit with spices that we like. It tasted a little like oven baked chicken, had a nice crisp/tender consistency, and was consumed by the kids without complaint.

Grandmother's Buttermilk Cornbread

Yummmmmm!!! My family doesn't really enjoy cornbread, but this was scarfed down. The piece that remained stayed nice and moist for breakfast too.

Pesto Tuna Salad with Sun-Dried Tomatoes

Super delish and versatile. Sandwich, wrap, or a pretty scoop in a bed of greens. My kids thought this was tolerable (which is high praise from them). And I thought that it tasted even better the second day. I am definitely adding this into the rotation.

Best Toffee Ever - Super Easy

Sooooo disappointed. Followed the directions exactly. Used a candy thermometer and everything and ended up with gloop. Flavorful gloop.

Herb Rubbed Sirloin Tip Roast

SOOO good! Just BBQed tri-tip in December. My whole family loved it. And one of the kids isn't very keen on meat or spice. I followed the revision advise and halved the table salt and used minced onion as I didn't have onion powder but it turned out great. Easy and delish!

Chicken Broccoli Ca - Unieng's Style

The instructions were nice and clear. And I was excited because I had all of the ingredients on hand. But in the end, it was just kind of bland. I even added more and different spices. But it was still bland. Sorry. I don't like to give non-stellar reviews.

Overnight Caramel Pecan Rolls

These never last long at our house. What a treat! I make a little extra caramel for the pan, brush the dough with melted butter (easier to spread on tacky dough) and cut the rounds with non-minty dental floss (helps to keep the filling in). Personal preferences, but the recipe is magical as is!

Peanut Butter Cup Cookies

Great recipe. Really worth the effort of putting dough into mini muffin tins. but But BUT I highly recommend turning down the oven to 350 or 325 and baking them longer. First time I made them according to recipe, I burned the bottoms of about 36 of 48 :-(

Asian Coleslaw

This is awesome. Such a refreshing (lighter) take on the traditional creamy coleslaw. A flavorful way to get your roughage, and easy too! I just throw the dressing stuff in the blender. It keeps pretty well too if you don't dress it until you eat it.

Amazingly Easy Irish Soda Bread

I made this for St. Patties tonight. Cut the recipe in half and still had more than enough for a family of 4. This stuff is moist in the center and crisp and flaky on the outside. It had the delicate flavor of a country fair scone. I used powdered buttermilk and butter instead of margarine and it still turned out fantastic. I would definitely make it again.

Oatmeal Blueberry Muffins

Tasty. The oatmeal makes them moist and chewy - not overly sweet. Nice! I use two cups of blueberries, lemon zest and sprinkled a pinch of cinnamon sugar over each muffin before baking.

Crispy Herb Baked Chicken

Simple and tasty. I didn't have potato flakes (instant mashed potatoes?) so I used crunched up rice crispy cereal. Worked well. Chicken was crisp and moist despite being served later than anticipated.
