Spicy Chicken Breasts

Spicy is certainly a good way to describe this recipe! Some spicy dishes do not live up to their name; thankfully this is not one of them. I love spicy food and this was right up my alley! The only change I made was to bake them in the oven as I do not have a grill. The dish uses a great combination of seasonings and is fantastic!

Tasty Tuna Burgers

I made several changes to this recipe, mainly because I didn’t have all of the ingredients. However, I omitted the dill and red pepper based on reviewers’ suggestions and used two cans of tuna, which resulted in approximately 5 hamburger-sized patties. I did not refrigerate for 30 minutes as suggested, but added approximately ¾ c. Italian breadcrumbs and had no problem with the patties falling apart. To compensate for my lack of chili sauce, I added a generous amount (3/4 T.) chili powder, extra hot sauce, and a dash of cayenne pepper. I also added one clove of minced garlic and some garlic powder (I love garlic). I used red onion and approximately ½ t. celery seed since this was the closest I could come to the real thing. To reduce calories, I used light mayo. I served these on hamburger buns with tartar sauce and made French fries and green beans as side dishes. When I tried a piece of the tuna burger by itself though, I was amazed. These patties are so good that you do not need buns. These would be phenomenal served by themselves with rice or a potato and a green vegetable.

Chewy Peanut Butter Brownies

This recipe is a good “cake-like” peanut butter brownie recipe and doesn’t have the “traditional” brownie texture. Still, this was a good recipe. I'd try it again.

Fabulous Zucchini Grinders

I wrapped my grinders in aluminum foil before baking, but the sandwich stuck to the foil! Reviewers suggested placing a layer of cheese to guard against this, and although I followed their advice, my sandwiches still stuck. However, I think I used too much sauce and the heaviness probably caused my aluminum foil problem. Despite this mini-mishap, my fiancé and I thought these were great--we just had to eat them with a fork instead of with our hands! I will definitely make these again, but use less sauce when baking. I might have some extra sauce heating on the stove in case we want more, but don’t want to weight the sandwich down during baking.

Cod Fish Cakes

I used pollock instead of cod, but the cakes still tasted great. Fish sandwiches with tartar sauce were made out of the leftovers and these were great too!

Easy Olive Martini Chicken

This tasted great. I sauteed onions and mushrooms along with the garlic and added them to the mix. I served this over pasta, but there wasn't enough sauce even though I doubled the liquid. Next time I will triple or quadruple the liquid. Too much sauce is better than too little; the extra can always be sopped up with some bread!

Brownie Oat Cookies

For those who need a quick and easy chocolate(and low-calorie)fix, this can help! While not the sweetest of treats, this does have a nice chocolate taste. I didn't have any corn syrup so I substituted an equal measure of honey. The cookies turned out great and I will have no problem making them again when I need a cookie quick fix.

Broiled Tilapia Parmesan

This recipe was great! I will certainly make it again. Like other reviewers, I added additional spices (paprika, garlic powder, crushed red pepper)and only broiled for 1.5 minutes each time. Since I only had enough shredded Parmesan chesse to make up half of the amount called for, I used grated Parmesan cheese to make up the difference. It still turned out great!

Banana Pancakes I

Baked Chicken Nuggets

This recipe got great reviews when I made it for my sisters. I dipped the chicken in egg instead of butter and used less cheese, but the nuggets were still great. I'll be making them again.

A Good Easy Garlic Chicken

I took the advice of another reviewer and browned the chicken, then added chicken broth and cooked over medium heat until done. I made a roux by mixing approximately 1 c. cold water with 1 T. flour, then stirred it into the remaining chicken broth. The chicken ended up being VERY moist. I served this over spaghetti noodles, but will try serving over mashed potatoes next time (just didn’t feel like making them this time around :) ).

Apple Pork Chops

This is a good recipe, but the sauce is too runny and needs to be thickened. I added two tablespoons of flour, but that still wasn't enough as I ended up having what looked like pork chops in water. I will add more flour next time or possibly try cornstarch.

Healthy Banana Cookies

I was looking for a recipe that would allow me to use my two leftover bananas; most banana bread recipes called for many more than two bananas, but luckily I found this cookie recipe! I omitted the dates (didn't have any), used quick oats instead of rolled (didn't have any rolled oats), added one tsp. cinnamon, 3/4 tsp. nutmeg, 1/8 tsp. ginger, and a few pinches of salt. I added some sunflower seeds to half the batch for some added texture/healthiness. Next time I will substitute applesauce for the oil, but these were great how I made them. Thanks for a great (and thankfully healthy) cookie recipe!

Baked Mushrooms

This is such a good recipe--with a few changes. I replaced the green bell pepper with diced red bell pepper, added a zucchini, and used red onion. I added a few pinches of crushed red pepper, doubled the garlic (or tripled!--my fiancé and I love garlic!), doubled the Italian seasoning, added a few sprinkles of rosemary and replaced the seasoning salt with half the amount of regular salt (didn't have seasoning salt). Also, I omitted the water, added a few splashes of the pinot noir we were having with dinner, and used three to four tablespoons of light butter. For four servings, I baked the dish for approximately 30-35 minutes and cooked covered for the first 15. There was a bit more liquid than I cared for, so I believe I will leave it uncovered the next time.

Ranch Crispy Chicken

This was great! Like other reviewers, I added a dash of paprika and spread mayo on the chicken before coating it with breadcrumbs. I made this for my sisters and although one of my sisters was slightly disgusted at the prospect of eating mayo with chicken, it came out perfect and didn't taste like mayo (you’d never even know it had mayo to begin with in fact)! I've made it a few times and it will be a staple in my home.

Ukrainian Cabbage Rolls

I didn't like this and ended up throwing most of it away. I boiled the cabbage to try and remove the leaves, but I used red cabbage and it ended up turning a blue color (sort of unappetizing and probably partly my fault for not doing proper research). This lacked flavor, and while I did add some things to try and fix this, it didn't do much to correct the problem. Sorry, I just don't think Eastern European food is my thing.

Carrot Rice Loaf

This has an unusual taste. I didn't care for it too much; for me it might be something to have as a side dish once in a great while, but I could definitely live without this recipe... It wasn't so much that it was a bad recipe, it was just that the taste didn't suit my palate.
